Here, you could try this one. I don't make them, but it sounds yummy enough I think I'm gonna try it.

Zucchini Cookies
1 c. grated zucchini
1 c. sugar
1 egg
1 tsp. cinnamon
1 c. chocolate chips or raisins
1 tsp. baking soda
1/2 c. butter
2 c. flour
1 c. nuts (optional)

Mix ingredients well and chill dough for at least 2 hours. Drop teaspoon of dough on greased cookie sheets. Bake in 375 degree oven for 12-15 minutes.
