My Mama sent me this recipe a few days ago, was able to try them out this morn....OMG, they are so good.

2 cups all-purpose flour
2/3 cup sugar
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 large lemon, zested and juiced
3/4 cup sour creme
2 large eggs
1 tsp vanills extract
1 stick unsalted butter melted

1) Whisk the dry ingrediants, including the lemon zest, together in a large bowl. In another bowl, whisk the remaining ingrediants, including the lemon juice.
2) pour the wet ingrediants over the dry. Gently, but quickly stir everything together. Don't worry about a few lumps, don't overmix batter.
3) spoon batter into paper-lined muffin tins. Bake 18 to 20 minutes, until golden brown at 350, cool 5 minutes before un-molding.

teresa thanks so much. heres my idea after they cool i am going to inject the inside with a sweet lemon curd similar to lemon merange pie filling. just a touch for an inside treat surprise. i will let you know if it holds up. happy days sherrye

i made teresas lemon muffins. the neighbor gave them a 885 on a 1 to 10.lol they were really good. i think my lemon was a little weak. i also did the suggestion of putting chocolate chips on top. yum. thanks teresa. happy days sherye

Oh my goodness that surely sounds good! I'll put this on my "To-Do" list. However, I bet it would taste much better with a lemony sour creme muffin in one hand, and a brownie in the other. Of course washed down with a big glass of cold, cold, cold milk!!!!!!!!!!!!!!! Thanks for sharing another great recipe with us Friend.

Okay girls, I got to thinking about the blueberries, so I made a second batch and threw in some chocolate chips (DD LOVES chocolate) and they were delicious!! Teresa, I think you've started something here!! Thanks for the fun!! Lin

I just got an idea, or maybe just a brain fart. I think I'd like to try these with a few blueberries tossed into each muffin! Is that a good idea or does it stink? I like the sound of blueberry lemony sour creme muffins!

my opinion is yes. i think it could be modified to add a different flavor or fruit. like a blueberry. lemons have about 3 tablespoons of juice per. that is if its a store bought one. i am getting the ing today to make. sounds so yummy teresa. thanks sherrye

Angela, zest and juice do taste differant, plus you would be adding more moisture and less body, so I just don't know.

I was wondering something. Can it be made with out the zest and not compromise the flavor? I don't have any lemons on hand, but I do have lemon juice.

oh my this sounds wonderful! Lemon is my all time favorite flavor in anything. My kids always either make a lemon cake or lemon meringue pie for my birthdays. ;)
Maybe next year I will suggest these for a birthday breakfast!!
