I just recently tried this recipe and it's very refreshing :)

Cold Rhubarb Tea
(from Charlie Burke on TheHeartofNewEngland.com)

Ingredients

8 cups rhubarb, cut into 1 inch pieces
8 cups water
Juice and grated rind of one orange or lemon (avoid the white
pith under the rind)
3/4 cup sugar
I pint fresh strawberries, mashed (optional)

Preparations

Simmer rhubarb on the water until tender (20 – 25 minutes)
Strain, pressing on rhubarb with a spatula to extract all the juice.
Stir in the lemon or orange juice and rind;
mix in optional strawberries
Add sugar, stirring until dissolved.

Cool and serve over ice.

Makes approximately 2 quarts

This looks fantastic! I tried a similar recipe this summer for lemonade, using strawberries and rhubarb... it was very good! So I'm sure this tea will be good, too!

I have just made my second batch of this tea and I have to say it is delicious! It is like drinking summer in a glass!

Hey - this is GREAT!! I've made it twice now!! I used my frozen raspberries since that's what I had (instead of strawberries). GOOD STUFF!!!! Thanks for the recipe!!

Ooooh, YUM! I'm fixing to make some of this!! My beast of a rhubarb plant has far more stalks than we use in baking, since hubby and I are trying to retain (or rather, regain!) our svelte figures!! haha. Tea sounds wonderful!! I just used up the last of my strawberries, maybe I'll try some of the frozen raspberries I've been saving...

Off to the garden!!
