Hey, anybody ever grilled eggplant. We're grilling tonight and just wondering how eggplant would be on the grill.

I LOVE the tiny eggplants! We toss 'em with olive oil, coarse salt and pepper and grill right on the grates. My son was 6 when we started doing 'em and we would just hold 'em by the stem and eat 'em hot off the grill. SOOOO, good.

Prayer costs nothing, but is worth the most.

I have even peeled and soaked it in beef broth the night before for a burger substitute and then grilled it. The girls love it with swiss cheese for my oldest, munster cheese for the middle, and cheddar cheese for the youngest. You can use the dwindling charcoal to grill 2 large eggplant sliced about a half inch thick and save it for layerin with your favorite tomato sauce and cheese for an eggplant lasagna. It is so quick to make if you grill the eggplant first. You only cook it till bubbly at 350*.

Grilled eggplant is simple and delish. As Julie says, olive oil and salt. Easy.

Yes! I love it! Brush with olive oil and spinkle with a little kosher salt and it is delicious. Melt a little fresh mozzerella on it and put it on a bed of sping greens with a little balsamic reduciton and it is to die for!
