Does anyone have a really good recipe for chocolate chip cookies? I've looked on the internet and of course most of the ingredients are pretty much the same, just in different quantities. When I make the recipe on the bag, they are totally flat. I like a crispie or chewy one, but not a really soft one. Anyone have any "secrets" to making a really good recipe? Thanks in advance.

I don't know if I'm too late on this thread, but Ree Drummond (The Pioneer Woman) posted a recipe a few weeks back that I've been dying to make...and then our a/c went out. But, it's

I have a recipe I have made since 1950ish. It is made with Bisquick and makes a cake type chocolate chip cookie. It's the only type my hubbie really likes. Of course, I double or 4x the following recipe most of the time.

2 c Bisquick, 2/3 c sugar, 1 egg, 1/3 c milk, 1 tsp. vanilla. Mix well and add a bag of chocolate chips. You can also add dates, nuts, or peanut butter chips.

Drop on a greased or parchment lined cookie sheet and bake at 375 for 10 min or until lightly golden brown.

The Puffy
Recipe courtesy Alton Brown

.Prep Time:20 minInactive Prep Time:--Cook Time:15 minLevel:
--Serves:
2 1/2 dozen cookies.Ingredients
•1 cup butter-flavored shortening
•3/4 cup sugar
•1 cup brown sugar
•2 1/4 cups cake flour
•1 teaspoon kosher salt
•1 1/2 teaspoons baking powder
•2 eggs
•1 1/2 teaspoons vanilla extract
•2 cups semisweet chocolate chips
Hardware:
•Ice cream scooper (#20 disher, to be exact)
•Parchment paper
•Baking sheets
•Mixer
Directions
Heat oven to 375 degrees F. Combine the shortening, sugar, and brown sugar in the mixer's work bowl, and cream until light and fluffy. In the meantime, sift together the cake flour, salt, and baking powder and set aside.

Add the eggs 1 at a time to the creamed mixture. Then add vanilla. Increase the speed until thoroughly incorporated.

With the mixer set to low, slowly add the dry ingredients to the shortening and combine well. Stir in the chocolate chips. Chill the dough. Scoop onto parchment-lined baking sheets, 6 per sheet. Bake for 13 minutes or until golden brown and puffy, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool and store in an airtight-container.




The Chewy

•1 teaspoon kosher salt
•1 teaspoon baking soda

•1 egg yolk
•2 tablespoons milk
•1 1/2 teaspoons vanilla extract
•2 cups semisweet chocolate chips
Hardware:
•Ice cream scooper (#20 disher, to be exact)
•Parchment paper
•Baking sheets
•Mixer
Directions
Heat oven to 375 degrees F.

Melt the butter in a heavy-bottom medium saucepan over low heat. Sift together the flour, salt, and baking soda and set aside.

Pour the melted butter in the mixer's work bowl. Add the sugar and brown sugar. Cream the butter and sugars on medium speed. Add the egg, yolk, 2 tablespoons milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Stir in the chocolate chips.

Chill the dough, then scoop onto parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 minutes or until golden brown, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool completely and store in an airtight container.

Somewhere on a previous post a recipe for Alton Brown's chewy, Chocolate chip cookies was posted. That is the best recipe I have ever made for CC cookies. Let me know if you want it posted again and I will look for it or re post it. You will not regret trying these cookies!

Hi Rose, I've tweaked my favorite chocolate chip recipe until I got it the way I liked it. I'm with you I like crispy outside and chewy middle. I pull the cookies out when the edges are light brown but the middles are still mostly light (whiteish). That way by the time they have cooled the middle has cooked to chewy perfection. Hopefully that helps! I just made chocolate chip cookies last night :)

It's not a from scratch recipe, but you can make very good cookies with a cake mix.

yellow or white Pillsbury cake mix
2 eggs (or 3 egg whites)
1/3 cup oil or applesauce

Preheat oven to 375 F. In large bowl combine cake mix, oil, and eggs until thoroughly moistened. You can stir chocolate chips with the ingredients, also. You can drop or shape the dough into 1-inch bowls. Place 2 inches apart on ungreased cookie sheets. The cookies may be flattened if you wish. Bake for 6-8 minutes until light golden brown.
I used the reduced sugar mixes sometimes. Any flavor cookie mix may be used for cookies.

I got this one out of my "BetterHomesAndGardens" Cookbook(1972)and I added extra goodies. They are really Yummy!

~3-Chip Cookies~
1c.shortening(butter flavored is best:P)
1c.granulated sugar
1 1/2c.brown sugar
3 eggs
1T.vanilla
1/2c. peanut-butter(optional)
3c.all-purpose flour
1 1/2t.baking soda
3/4t.salt
1c.chocolate chips
1c.peanut-butter chips
1c.butterscotch chips
Cream shortening, sugars, eggs and vanilla until creamy. Sift together dry ingredients, stir into creamed misture.(I just put latex gloves on and dig in):) Stir in chips. Roll into balls and place 2 in. apart on greased cookie sheets and bake about 12 minutes at 375 degrees. I got about 4 dozen. Depends on size.
These are warm, gooey and comforting. ;-)
