Posted - Jun 30 2010 : 07:14:24 AM we also use the vinegar sugar combo. mom used to make the dish when she was going to start supper. then it sat out for awhile to marinate. so while cooking dinner she would put it in the fridge to chill just a little. when we were ready to eat we she would take out and serve. they are crunchy and sweet sour not too strong and not rubbery from soaking for a longer time in brine. we loved the juice. she also made harvard beets she called it. they were cooked beets marinated in the brine then thickened on stove with corn starch into vinegar beet juice. some what like cream peas only beets sweet and sour. just a thought. even though we are north mom cooked a lot of southern foods and the better home and garden cook book. happy days sherrye

They are really good. 5-6 thin sliced cukes 1 pound onion sliced thin 2 red and 2 green peppers sliced in strips Brine: 3 1/2 cups sugar 2 cups vinegar 1/4 cup salt Mix brine-do not heat. Stir often until sugar is dissolved. Add veggies and refrigerate overnight

Posted - Jun 23 2010 : 9:14:45 PM Susie, I use equal parts suger, water and vinegar, we like the "bite", but a little mellower. I made this over the wknd., tomatoes, cukes, green pep, and onion, to die for!!

Posted - Jun 23 2010 : 10:48:18 AM Are you making pickles? The recipe I use is for kosher dill pickles and makes a huge batch. Hope this helps. 9 lbs of pickling cukes 1 c pickling salt 2 qt water 1 qt white vinegar (5% acidity) 2 heads fresh dill 2-3 cloved garlic (*Optional I add a red pepper pod and a few of the seeds to some jars for extra spice)
Combine your water, vinegar and pickling salt in a large non reactive pot (no aluminum) and bring to a low boil stiring occasionally. Pack the cukes dill, garlic and pepper into sterlized jars leaving 1/2 headspace. Pour hot liquid over packed jars leaving 1/2" headspace. Remove air bubbles and cap each jar. Water bath process 10 minutes for pints or 15 minutes for quarts. At this point we put some in the fridge and they are ready to eat in 24-48 hours. The spicy ones we usually let sit for 3-4 weeks before opening.
