My moms eye doctor told her to eat kale to help her eyes, so she went to the store and bought some now my questions is how do you fix it there are no recipes in any cookbook we have. Blessings,Karen

I cut it into pieces about 3 inches long, toss it with olive oil, spread on a cookie sheet, salt, and bake at 325 for about 20 minutes to make kale chips. This is my family's favorite way to eat it.

Recipezaar.com has some great recipes - you can type kale in and do an ingredient search. I use that website all the time... one of my favorite things to do with kale is to make a knock-off Olive Garden Zuppa Tuscana soup!!

I would use it as any other green, I also got a recipe for kale ravioli off Christina Cooks. It's a PBS show, I believe her website is Christinacooks.com.

Forgot a couple, kale pesto and take sliced kale and marinate with olive oil and a pinch of salt. Let that sit a few hours and it takes on a cooked texture but it still has all the goodness of raw. then put anywhere, sandwiches, salad, etc

I love kale so the question is what not to do with kale. My favorite ways are, sauteed with olive oil, garlic, squeeze of lemon and sometimes dried figs. I coat kale with a dressing or sauce and dehydrate it to make kale chips. Torn up in salads is great. In soups, stews. Or get a big leaf and wrap you favorite sandwich filling and eat like a wrap. Put some in a smoothy. Use as a filling in phylo dough like spanakopita. I toss some in with pasta. I am hungry now so I have to go eat some kale. Enjoy
