Today for my little girl's afterschool snack, I was inspired to make the recipe featured in MaryJane's book, Unleashing Your Inner Wild, "Healthy Corn Doggies". They were delish!! I made mine with Organic Carrots and broccoli, and mixed the two veggies together instead of making two batches. I don't have a corn muffin pan like she uses in the book, but used my mini-muffin tins. One batch made two tins. The only problem with them is, neither one of us could stop eating them! I will be making these alot!! My kiddo loved them, so did I!

Oh goodie glad to hear they are so tasty I've been wanting to try making those. My DH is a very picky eater so any veggies I can sneak into him is a good thing :)

I made them for lunch with golden beets and a touch of smoked paprika for that smoky "hotdog" taste. YUM!!!!! Thanks for the recommendation Nicole!

Yes, the Outpost book. I got mine for my birthday from DH in the three book set. The recipe is on page 83. I can't wait to try other kinds of veggies, too. I think it will be a great way to "use up" my leftover steamed vegies we have for dinners, too. I swear, my daughter and I could have polished them ALL off if we didn't step away from the muffins!
