Does anyone have a good rolled oat muffin recipe? Something with basic ingredients I would typically have would be great! I have some leftover oats and was thinking that these muffins would be a good on-the-go breakfast idea. Thanks!

I have a Quaker Oats cookbook that I purchased many years ago at Quaker Square Mall in Akron, Ohio, with a plethora of rolled oat recipes... But you can find most of them online at http://www.quakeroatmeal.com/kitchen/recipes/index.cfm or http://www.quakeroats.com/qfb_Recipes/index.cfm

MMMmmm...I don't have one, but they DO sound good! I'll bet you could just add a cup or so of oats to a recipe and take out 1/2 cup of flour (or so...). I'm not sure on the exact amounts, so you'd want to experiment.

I use rolled oats in bread and for, real original -- oatmeal.
