I seem to remember something about putting an apple slice in with hard brown sugar - is this right? Also I have one of those little terra cotta things that is supposed to keep it soft but it didn't - are you supposed to get them wet or something?
Any other tips?

Whatever you do, if you put the bag in the microwave, make sure you remove any twisty-ties, first. I caused a small fire in my microwave when a twisty tie burst into flames.

I have a terra cotta bear and love it! I used to have brick hard brown sugar but no more. If it starts to get hard I just take the bear out and give him a good soak and put him back in the bag. Why couldn't you use a piece that broke off of a terra cotta pot? Of course I believe I'd give it a good scrubbing and soak it in boiling water first!

Apples do work. I have a terra cotta thing and it works wonderfully. Yes you do have to soak it before putting it in the container or bag. I soak mine every so often for 15-20 minutes, dry it off and pop it back in with the sugar.

So good to know, I guess if I had read the instructions on the little disc thingie....
I buy in bulk too and I am repurposing 1 gallon olive jars which were free, but they are not air tight. Good to know about the bread trick too,

I LOVE the terracotta pieces but you have to soak them for at least 20 min before putting them in the sugar. They absorb the water, and then they gradually give off that moisture to the sugar, usually overnight. Also, if your sugar dries out, your container isn't air tight, so if you go through the sugar real slow it may dry up again. No biggie, you just re-soak the terracotta and overnight it will freshen the sugar back up. I have to use those as my containers aren't airtight and I buy muscovado in bulk to save $$.

Amy Grace- Yes- those terra cotta pots are supposed to be soaked in water overnight first to absorb moisture otherwise they just dry the sugar out!

wow- never too old to learn a new trick. I did not know. But here in the south, the humidity kind of keeps brown sugar from ever becoming a true brick, and if it hardens, just use a utensil to break it apart. I keep mine in a plastic container with an airtight lid, because it can actually gather moisture from the air!

I find that putting a slice of fresh bread in with it works overnight.

Sprinkle the sugar with water and bake at *200 for 10 mins. The apple slice will work as well but takes 3-7 days. Those terra cotta things never worked for me. I put my brown sugar in a jar or ziplock bag with a mesh bag tied up of rice inside. It works so much better.
