I just discovered the Pioneer Woman cookbook and website recently - one of my favorite things is the Tasty Kitchen part, where people write in and share their recipes. So I was "wandering" around over there and, in checking out the canning recipes, discovered a recipe for lemon curd. I love lemon curd and was further encouraged to try this because it uses a bunch of eggs (chickens are happy, we have lots of eggs) Oh my goodness it is delicious - very easy to do too. It would be a perfect gift too because it is one of the prettiest things I have ever seen canned. I wish my computer was not so elderly and would let me post some pictures because they truly were a sight to behold.

I am wondering the same thing as Beverly. There are so many on there that I am not sure which one it is!! Can't wait to try it though and get it canned, I am anxious to see the pretty jars on the counter!

I used less lemon zest than the recipe called for but I loved mine - glad you had fun. I was totally thinking Mother's Day presents when I made mine, which means I will be making another batch soon - fortunately I've got lots of eggs:)

I made my lemon curd last night! It was so easy to do and so delicious! I halved the recipe because there was some chatter on there about shelf life of canned goods containing eggs and butter. In 10 weeks I should be ready to make another batch... and what a great gift for mother's day! Thanks again Amy Grace for sharing the link! :)

Kristin - in the Tasty Kitchen section of the blog, over on the left there is a section that says "Browse Categories", click on the canning category - it will give you a big list, the lemon curd is about the 6th one down.

Oh my gosh, what an great website for recipes! Thank you for sharing this. I love to cook and find new recipes that are healthy. Already found a couple and printed them! Did you see the polenta lasagna? Already on my grocery list.
