 Posole Mexican Lasagna--you gotta try it!

So, okay. I kind of stole this from Rachel Ray, but my version is so much better. Really! I have discovered that I LOVE GREEN CHILE SAUCE. Weird, but really, I do. It has just the right amount of fresh flavor and heat--as Rach would say "yum-o". Anyway, this version is really good, particularly Day 2 as left-overs. You'll need: A mix of white and whole wheat tortillas, amount depends on how large a lasagna you want to make; about a pound of ground pork, browned, or (as I used) left over pork roast chopped finely; about a teaspoon each of ground cumin & ground corriander, mixed into the pork; a can of good Green Enchilada Sauce (I like La Preferida); a can of white or yellow hominy, drained; about a half pound of Monterey Jack cheese, shredded. I slice the tortillas into strips, and then you start layering in a greased casserole dish:
(1) Put down a little sauce, then a layer of tortillas
(2) next, a layer of meat
(3) a layer of cheese
(4) a little sauce
Continue for another cycle of layers, ending with
(1) tortillas
(2) a little sauce
(3) the remainder of the cheese
Now, pop this into an oven set to 350 degrees and bake for 25-30 minutes until golden brown on edges and bubbly. It is really, really gooooood! And, if you have tomatillos from the garden fresh, I recommend making your own salsa verde & using that instead of the canned green enchilada sauce. Woweee!

Its sounds like layered enchiladas. I dont roll mine, we stack around here. Posole is our Christmas tradition. Its simple, hearty, delicious and easy to cook. My family loves to come for a bowl. The layered sounds interesting. Corn tortillas would taste good too.

Eeek! I forgot to say, layer the hominy in too! Ha ha! I put it in on top of the pork, before the cheese. Does that make sense? It really adds to the dish to have hominy in it!
