Hey everyone. I just made some dandelion jelly using clear-jel. I'm not sure how it's going to turn out, as I've never made anything with clear-jel before. Do you ladies have any recipes to share? For my dandelion jelly I used 3 TBSP, and 2 cups of infused water, 1/4 cup lemon juice, 3 1/2 cups sugar, and lemon zest.

I used it to thicken hot pepper mustard. It clumped up on me and I had to strain it.

Are there substitution instructions somewhere for using Chill-over? I do have some of that in the house.
Nevermind - I found the basic jam recipe on her website. Going to give it a try if I can find enough dandelions this weekend.

Cornstarch? Rats! My husband is very, very sensitive to corn products. Any other options out there?

It's a modified corn-starch-you're suppossed to be able to use it to thicken everything from gravy to jelly. http://www.amazon.com/Barry-Farm-Clear-Jel-lb/dp/B00015UC4S

:( Yeah, I've got a whole pound of it. I tried it in the dandelion jelly, and my jelly didn't set up firm enough. i'll have to add a few more TBSP, or switch to pectin.

Oh, I am so glad you shared this! I bought some clear-jel last year to make some apple pie filling and was hoping to find some more uses for it! I only have a minute now, but I'll dig out my recipe and post it later. It was yummy. Sure hope there are more recipes out there, since I bought quite a bit mail-order.
