Apple Cake in a jar

Sterilize 7-9 wide mouth pint jars and lids by boiling them in water for 10 min. Cool and grease inside with butter or shortening (avoid getting grease on rims)

2/3 cup butter
2-2/3 cups sugar
4 eggs
1 tsp cinnamon
2 tsp baking soda
1-1/2 tsp salt
3 cups flour (I use half whole wheat flour)
2/3 cup water
3 c. grated apple (with or without peels)
2/3 cup raisins (optional)
2/3 cup finely chopped nuts

Mix ingredients together in the order given. Fill the prepared jars half full and place on a cookie sheet bake in the oven on the middle rack for 45 min. at 325. When done, remove jars from oven one at a time and screw lids on tightly. Unopened jars will keep for a year.

hint: don't over fill these! The batter rises to just the right level when filled half full in beginning. If they do get too full you can slice off the excess but use those jars first.

I have made nut bread, banana bread,carrot cake applesauce cake and even chocolate cake in jars this same way...they all work well.

The carmel sauce amd whipped cream got me.
Jenny I'm going to a farmgirl tea next month and this sounds good enough to take and share, only I'll try it as a sheet cake.
While picking up the carmel sauce I also got some apple cinnamon sauce.

Susan...like Patti said..butter it up really well. Only use wide mouth jars too.
I am sending some to my grown son in Calif since I can't be there to bake his birthday cake. I am making banana cake in a jar today...just using my favorite banana cake recipe and baking the same way as the apple. Gosh Patti..the caramel sauce on it sounds so so good!!

Susan...you have to oil or butter it up really well inside the jar and then take a butter knife around the whole outside of the cake to separate it from the jar.....sometimes using the knife to nudge it out. Good luck!

Just read this recipe - I think it would be a great treat to send to our troops - they would really enjoy a taste of HOME in a jar.

I made these apple cakes in jars and they were a huge hit with anyone I gave them to. My son who doesnt like cake at all ate a whole piece including crumbs whenever I would break one open. We put carmel sauce on top of ours with homemade whipped cream....a little piece of heaven!
