 Help! Birthday cake question

Okay, been awhile since I baked a cake from scratch. Never been that great with icing. My daughter and I are baking a cake. Ready to frost. Tried first recipe for icing, had to throw it out. Icing was "bumpy" no matter what we did. It was a chocolate icing. Any ideas why? Now we are trying a cooked buttermilk frosting...if this one works and has butter and buttermilk, does the cake need to be refrigerated? Or since it is a'cooked' version, can the cake be on the counter under a glass cake keeper? Any help is appreciated.

This also is a rich iceing, but if you don't put in on real think, it is chocolate heaven.

1 pack of milk chocolate chips
2 cans sweetened condenced milk

in double boiler, put both cans of con milk, heat til warm, slowly mix in chips til melted, let cool slightly and ice your cake

Okay, cake was good. My daughter was so proud. Icing was a bit too rich...anyone got a good chocolate icing recipe they can share?

Thank you, yes, I will probably refrigerate it just to be safe. I love to cook and bake, but have never mastered icing! I don't know if it is edible... will be trying it soon, but we sure had fun!

A good rule of thumb is: if it has dairy products in it, it should be kept cool at the least and probally refrigerated.

Nicole - we have a drafty old house and I have a hard time getting butter to soften for about 6 months a year!! I also can't ever get bread to rise unless I use the oven:) And my cakes are always lopsided because there is a definite tilt in the floor in my kitchen - oh well, they always taste good, and as long as you had fun and did something with your daughter that is all that matters!!

Thanks, Amy. It was butter, and we went to a counter by a windows, that is drafty. Must've been that. Switched to a cooked buttermilk, butter icing, needs more icing. Finished our cake, it's kinda sad looking, but we had fun. :)

Nicole - was it a butter-cream icing? If the butter was too chilly that can happen. You should be fine with the cooked frosting on the counter, as long as it is just for a couple of days
