 Finally! Some soft homemade wheat bread!

I have been making wheat bread for years now. I grind the wheat berries and use my own fresh eggs and raw goat or cow milk. Local honey and good olive oil. This bread uses gluten and lecithin also. I used the lecithin for several years then stopped. I have noticed the bread is very dry lately and does not stay soft and is dry. So I told my friend who's bread and rolls are always so soft. She asked me if I was using lecithin. I said no I quit because it's soy and I want to stay away from soy. So yesterday I made 3 loaves and used the lecithin. It is so soft and so pretty and not dry at all today. Still soft. So I guess I need to start using the lecithin again. It's only 2 tablespoons for the 3 loaf recipe. And it sure did help the bread. So I am ok with it now.

Yes, I have used granular before. I just had the powdered in the freezer.

I just googled lecithin. It's found in soybeans and eggs. It's used to keep certain ingredients fron separating out. Hmm...

Also used to treat memory disorders like dementia and Alzheimers. And used to treat gallbladder and liver disease, certain types of depression, anxiety, high cholesterol and exema. Well, I am glad I looked. I'm sure there's lots more about it.

I can only find granular lecithin at the food co-op. Can I use that put grind it into a flour or using the grandulars okay. Thank vicki

Victoria, not really sure exactly what it is but have been told it's soy. I stopped using it a few years ago. I noticed that my bread was not soft like all my friends who make the same recipe. One of them asked me about the lecithin and I told her I had stopped using it. So she said I need it to keep it soft. So I have been using it again. And the bread and rolls are so much better. I hope this helps.

Sherrye, Mazie is Red Angus. Roxie is 1/2 Jersey-1/2 black angus. And I think it's ok to breed now. When it gets really hot then the bucks may not be able to get the job done. Not totally sure though. I think there might be some breeds that could go all year. Good luck with yours. You'll know in about 5 months.

i do not remember what kind of cows you have? i do have too many. lol well anyway was able to clean corral with maddie in it. she ate grain out of a bucket from me today. brought in a buck boer for ginger today. we will see what happens. kinda late for goat breeding you think? you think she will come in again this late you farmgirls?sherrye

Sherrye, he left this morning. He'd been here 3 days. I hope you have fun with yours while he's here. There's so much to do around here mine's ready to leave after a few days. So you are going to have a lot of cows. When is she due? I'm going to breed Mazie in June. She'll be 2 in July. I want a spring baby. Then Roxie will be 1 in Aug. I still have a ways to go before I breed her. I am thinking about selling them. I don't know yet.

Sherrye, I have tried the bread from MEN magazine. It was ok. But I think I will stick to thes bread. I really don't know if it will work like that. Let me know how it does, ok? I also use hard red and hard white with some Kamut too. But Kamut is so expensive I can't use too much. It has a good flavor.

Ellen, I emailed you. And did you read Sherrye's post about the GMO corn and soy? That's another reason.

I made bread twice in just a few days. It sure goes fast when there are people here to eat it. I made rolls too for my hubby to take with him.

okay, I admit I am new to the MJ's way of doing things and don't know very much. So another dumb question. I make my own whole wheat bread and use a litte gluten, I have never tried the Lecitin, but my question is why is soy bad? I always thought it was something that was good to use, vegan and so on. Can anyone explain it to me? I'm trying to get enlightened and LOVE the MJ way.

i am going to try your recipe kris. it is similar to the bread you can store in your fridge. i make a dough and before it rises once, i put in oiled bowl cover damp towel put in fridge. pull dough as needed and rise and bake. so yummy. dough lasts about a week. then yeast gets too strong. i just ground my first wheat yesterday kris. made papas bread was super good. i used hard red and hard white wheat together with a touch of plain four. i used 1 tblsp. gluten. turned out good. froze 2 loafs of dough to bake later.ended up making someones heres dinner of ham and scallop potatoes for papa and bread.sure good to hug these men when their home.happy days sherrye

Not stupid at all. I didn't know a thing about this til I started. It's a yellowish powder. And it is a soy product. That's why I don't like to use it. But like Sherrye said, 2 tablespoons in 3 loaves is really not that much. But it's still in it. So I will have to check and see if there is any other source. Maybe someone else knows? This recipe came from the Bread Beckers. They are in Woodstock Ga. They have a huge store and warehouse now. They sell all kinds of good things. They do have a web site. I hope this helped. Oh, so that's where we get our lecithin. But I think I have seen it in stores like Whole Foods. We have Greenlife here. And just got Earthfare. So I am sure they would carry it.

I have a Whisper Mill and a Zojurushi bread machine and also a DLX mixer. I buy the 50 pound bags af wheat berries and grind them. That's the only way I have ever done bread.

Here's the recipe:

2 1/2 cups warm milk
3 eggs
2 tbls. gluten
2 tbls. lecithin
4 1/2 teaspoons yeast
1/3 cup olive oil
1/2 cup honey
7 1/2 cups freshly ground whole wheat berries (I use hard red, hard white, kamut and sometimes a little oat flour,. You can use any comination)
1 tbls salt ( I use sea salt)

I put everything in mixer with 5 cups flour and mix til all together. Then add salt and the rest of the flour. Mix 12 minutes. Or if kneading, knead at least 20 minutes by hand. I sometimes only use 7 cups of flour and sometimes 8 or more. It just depends on the day I think. If you've made bread you know what it should look like.

I then heat the oven just a tad and let it rise 45 minutes in there in the winter. In summer it goes out on the back porch to rise. After 45 minutes or so, take out and shape into 3 loaves or rolls or both. Let rise again 45 minutes or til doubled. Bake at 350 for 20 minutes for the bread and only about 12-15 minutes for the rolls, depending on how you like them baked. Enjoy!

I hope ya'll try this. Please let me know if you do. I would love to hear from other people how there's turns out. Oh, you can also add seeds and nuts if you like that. Sesame, flax, sunflower, pumpkin, whatever ya like.

is soy the only source for lecithin? what about guar gum. or i think there is one more thing on my shelf that makes things smooth.i learned some of the tricks when i was eating gluten free. i bought whole wheat berries organic white and red for bread. going to try papas moms old wheat grinder. hope it works. will let you know. want to start the sour dough too. made colby turned out yummy.kris i think 2 tblsp. is not very much will you share your bread recipe? sherrye
