Posted - Mar 25 2010 : 09:19:42 AM The carrot cake turned out wonderfully! Very, very, very tasty. I made it in two round pans, with parchment on the bottom (I can't stand it when cakes stick!) and put frosting between the layers and all around on the outside. Hubby was impressed and very happy with his special cake. Thanks so much for the recipe Mary!

Posted - Mar 20 2010 : 5:10:16 PM Thanks so much ladies! Oh, there so many good recipes to choose from! The one with pineapple & raisins intrigues me. I think I will try that one. All of them sound wonderfully decadent and delicious. I don't make cakes other than for birthdays and very special occasions, so I don't mind the extra ingredients.
Will let you know how it turns out.

My husband's favorite cake recipe (we make cupcakes):
Carrot Cake (from the Williams-Sonoma Baking Book)
3/4 lb carrots, peeled and cut into 1/2 inch slices 1 1/4 cups all-pupose flour 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 tsp ground cinnamon 1/2 tsp freshly ground nutmeg 2 large eggs 1 1/3 cups firmly packed light brown sugar 1/2 cup whole milk 1/2 cup unsalted butter, melted and cooled to room temperature 3/4 cup walnuts, lightly toasted and chopped (optional) 1/2 cup dried currants (optional) cream cheese frosting
Bring a large saucepan three-fourths full of water to a boil. Add the carrots and cook until tender, 10-15 minutes. Drain and let cool. In a food processor, puree the cooked carrots. You should have about 1 cup puree.
Preheat the oven to 350 degrees. Line the bottom of an 8-inch square baking pan with parchment paper. Shift the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together onto a sheet of waxed paper.
In a large bowl, whisk together the eggs and brown sugar until well combined. Whisk in the milk and melted butter. Whisk in the flour mixture and then the carrot puree. Using a large silicone spatula, stir in the walnuts and currants (optional). Pour the batter into the prepared pan and smooth the top. Bake until the cake is lightly brwoned and a cake tester inserted into the center comes out clean, 45-50 minutes.
Let cool on a wire rack. Run a knife around the inside edges of the pan, invert the cake onto a serving plate, and peel off the parchment paper. Using a straight frosting spatula, spread the frosting on the top and sides of the cake. Refrigerate if not serving right away. Remove from the refrigerator 30 minutes before serving.
Cream Cheese Frosting Enough frosting for one 9-inch cake
4 oz cream cheese, at room temperature 2 Tbsp unsalted butter, at room temperature 3/4 cup confectioners' sugar 3/4 tsp pure vanilla extract
Using a stand mixer fitted with the paddle attachment, beat the cream cheese, butter, confectioners' sugar, and vanilla on medium speed until the mixture is completely smooth and well combined. Use right away or store in the refrigerator for up to 3 days. (I make a double batch for cupcakes)

Posted - Mar 20 2010 : 05:35:53 AM This is the one from Joy of Cooking. I have not tasted it because I am very allergic to eggs, and it is a "high egg" recipe. Everyone else loves it! The firt time I made it, I forgot to put the pineapple in the batter, so we put it in the frosting. It made more or a sauce/ a glaze and it was a big hit. So that's a variation on the recipe. This is for 2 9X2 inch round pans, 2 8 X 8 inch pans, or a 9X13 inch pan. Grease and flour pans, or line bottoms with wax or parchment paper.
Wisk together in a large bowl 1 1/3 cup flour 1 cup sugar 1 1/2 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1/2 tsp cloves 1/2 tsp freshly grated or ground nutmeg 1/2 tsp allspice 1/2 tsp salt
Add and stir together well w/ ruber spatual, or beat on low speed 2/3 cup vegetable oil 3 large eggs
Stir in 1 1/2 cups grated carrots 1 cup finely chopped walnuts 1 cup golden raisins ( optional) 1/2 cup crushed pineapple, lightly drianed ( optional) ( I put the raisins AND pineapple in unless I forget, LOL)
Bake until toothpick test comes out clean in the middle of cake 25-30 minutes in round or square pans, 30-35 minutes in 13X9 pan. Let cool in pans on rack for 10 minutes Detach edges from pan with thin knife. Invert the cake and remove liners if using. Cool right side up on rack.
Cream cheese frosting Have cream cheese cold and butter at room temp
Beat until blended: 8 oz cream cheese 5 Tbs unsalted butter ( optional) 2 tsp vanilla
Add 1/3 at a time and beat just until blended:
2 to 2 1/2 cups sifted powdered sugar
If too stiff, beat a few seconds longer. Do not overbeat. If desired, add to taste: grated lemon or orange zest ground cinnamon liqueur of choice
I do not make this cake very often, as it neeeds so many ingredients. It is for special occasions.

2 cups flour 2 cups sugar (1 brown, 1 white) 2 tsp baking soda 1 tsp baking powder 1 tsp salt 1 Tbsp cinnamon 1 tsp ginger
4 large eggs 1 3/4 cups vege oil 1 Tsp vanilla 4 cups grated carrots 1 cup chopped walnuts (optional) 1 cup raisins
Beat eggs and oil together until frothy. Gradually blend in dry ingredients (flour last) Add carrots, nuts, raisins, and vanilla and blend well with a mixer on low speed. Pour into 9x13 greased pan and bake for 1 hour at 350, or use 3 greased 8" round pants for a layer cake and bake at 350 for 30 minutes. Cool for one hour and then frost with cream cheese frosting:
2 sticks butter (softened a bit) 2 8 oz. pkgs. cream cheese (softened a bit) 2 cups powdered sugar 1 tsp vanilla
Beat butter and cream cheese together. Beat in powdered sugar and 1 tsp vanilla.

Posted - Mar 19 2010 : 8:13:46 PM I have one and here it is. 2 cups Flour 2t baking soda 1t salt 2t cinnamon 2 cups sugar 1 1/2 cups oil 4 eggs 3 cups grated carrots 1t vanilla Mix dry ingredients and oil beat well add eggs one at a time and mix well aftereach Beat well add grated carrot grease and flour a 15 1/2 by 10 1/2 pan.. I have put it in a 9x13 and it is just a thickier cake but does take a bit longet to cook. bake 350 30min
frosting 1 box powder sugar 8 oz cream cheese 1/2 cup butter softned 2t vanilla cream and frost when cake is cool bake 350
