Channah shared that she was going Salmon fishing (snagging?) so I am posting these recipes. Try them they are so tasty!


Firecracker Grilled Salmon

Four (4-6 ounce each) salmon fillets, thawed
¼ cup peanut oil
2 Tablespoons soy sauce
2 Tablespoons balsamic vinegar
2 Tablespoons chopped green onions
One ½ teaspoons brown sugar
One clove garlic, minced
½ teaspoon red chili flakes
½ teaspoon sesame oil
1/8-teaspoon salt

Place salmon in a glass-baking dish. Whisk together remaining ingredients and pour over salmon. Cover with plastic wrap and marinate in refrigerator 4-6 hours. Remove salmon from marinade and place on foil-lined grill. (Spray non-stick cooking spray on foil before placing on grill) Grill for ten minutes per inch of thickness, measured at thickest part, or until fish flakes when tested with a fork. Turn halfway through cooking. Serves four.

Barbecued Salmon


Eight (8 ounce) salmon fillets
1-cup soy sauce
2 teaspoons liquid smoke
One Tablespoon sugar
One cup dry white wine
½ teaspoon ginger
1-teaspoon black pepper
One Tablespoon sesame oil
1 teaspoon minced garlic
1-cup barbecue sauce
Fresh dill sprigs

Combine soy sauce, liquid smoke, sugar, wine, ginger, pepper, sesame oil, and garlic and stir well. Pour over fillets and marinate twenty minutes. Grill salmon, 10 minutes per inch of thickness, turn halfway during cooking. Baste each fillet with two Tablespoons of barbecue sauce. Remove from grill when sauce is heated about two to three more minutes. Garnish with fresh dill sprigs. Serves eight.
