This recipe came from Bon Appetit~ I made this last night for a light supper (we cleaned all day and organized, so I was pooped!) It was a great way to welcome in the season~very fresh, and even with cream, it was only a 1/2 cup so I imagine this to be a not overly fattening soup.

2 lbs. fresh green asparagus
1 medium onion, chopped
3 tbsp. butter
5-6 cups chicken stock
1/2 cup heavy cream
1/4 tsp fresh lemon juice

Chop asparagus from tip to end in 1/2 inch pieces. Set aside.

Saute chopped onion in 2 tbsp. butter until softened. Add asparagus pieces and saute about 5 minutes, adding salt and pepper to taste.

Add 5 cups of stock and bring to simmer for 15-20 minutes until very tender. Working in batches, remove asparagus/stock mixture and blend until smooth. Place blended soup all together in new pot, adding cream when warmed through. Bring back to low boil, add last tbsp. butter, lemon juice and salt and pepper. I topped mine with minced fresh chives for garnish.

Easy, easy and oh-so good!

I served them with popovers with bacon, green onions and white cheddar cheese inside. I didn't want to commit to a sandwich or anything last night, but dinner sure hit the spot!

I made this tonight finally! What a perfect day for it too. Only change I made was that I threw a parmigiano reggiano rind in with the stock for flavor. YUM!!!!

Jonni, Thank you so much for the receipe! We love Asparagus!! Grill it all the time,YUM! So soon as it stops snowing here I'm heading to the store. Which I had everything right now, it would have been great on this cold, snowy day. It awfully slick right now. Maybe they will get the roads cleaned and we can have it tomorrow. Well let you know how it goes.

That does sound good Jonni. I just had some Asparagus Soup at a little cafe--the Curious Chef Cafe---They make their own soups and it was delish. Now I will make some at home. Thanks. MB

It was very good, Marsha, and I don't think it's very fattening, as I mentioned. The recipe said it would also "keep" well (i.e. fridge or freezer) without the addition of cream. You can do that when warming it up.

We also grill asparagus at our house. Brush it good with olive oil, then put on spears and grill over hot grill 2-3 minutes on each side. Salt with kosher salt and a little squeeze of lemon after. YUM!!

I'm making the Pioneer Woman's bacon/potato/leek pizza tonight for dinner. Another wonderful way to use leeks~I looove this time of year!

This sounds great. I'm always looking for new vege ideas. I have to rotate my foods every 4 days and haven't eaten asparagus in months, just so boring. Instead of potato and leek I thing I will make this for the family to try. I like how the leeks give foods a different flavor.

You know, I have NEVER liked asparagus. Don't ask me why....maybe it is a aquired tast?? I never aquired it lol.

I did, Vicki. I crisped the bacon first, then sauteed the onions in the bacon grease for a bit to soften and grated the cheese right into the batter and gave it a little stir.

Julie, I'll be curious to know what you think. It was soooo good, I've eaten it for lunch 2 days in a row after dinner on Sunday!

Lainey, it was sooo yummy (and sooo easy) and asparagus has wonderful healing elements. Kroger had asparagus .99 a lb. this weekend!
