Does anyone know how to store amaranth. Should I grind it and store the flour, or should I just store the seeds till I need to use it. Do I store the seeds like wheat? Thank you Vicki

Vicki, I would say at least a year. It is not a high fat grain so not a lot to go rancid.The freezer keeps bugs out and the mold, which is the worst for grains. I keep everything in the freezer. I just pulled out some winter wheat groats from 5 years ago and oat groats from 3 years ago. Both like the day they went in.

I always store it unground in the freezer. I have not had any problems and I have had some for a long time.

I would store it as a whole grain and then grind it as needed - you should be fine storing it as you would wheat, cool dry place. Of course you don't want to keep it around too long so only buy what you need for a couple months.
