I've wanted one forever and the other day I was at the classy thrift store and they were just putting it out and I snatched it up so fast I think I scared the poor lady.
*heehee!* It is in wonderful condition and I've washed it twice and dried it twice and can't wait to crank out some hand made pasta

I just found this wonderful sounding recipe online and thought I'd start a pasta making thread thread soon...any other pasta making enthusiasts ?

NOTE There seems to be a slight discrepancy over the lemons, I don't know by reading the recipe it sound like only one is used , but it calls for two hmmmm. So, I'll just have to experiment

Lemon-Dill pasta
Ingredients:
2 lemons
1 2/3 cup all-purpose flour
1 cup semolina (pasta flour)
1/2 teaspoon salt
1 1/2 tablespoon dried dill
4 eggs, lightly beaten
1 1/2 teaspoon olive oil

Directions:

This recipe makes a really great pasta to make seafood ravioli.

Remove zest from the lemon, and finely chop. Squeeze the juice from the lemon. You should have about 3/4 tsp. of juice. Combine flour, semolina, salt, and dill on a large cutting board or work surface. Form a well in the center of the flour and add the eggs, oil, lemon juice, and lemon zest. Begin mixing with your fingers (of one hand), using the other hand to push flour from the outer edge of the flour well into the eggs.

Continue mixing with one hand, using the other hand to support the outer edge of the flour well to prevent the batter from flowing out the side.

Continue mixing by hand until mixture becomes a firm paste. Roll into a ball and knead, with the heel of your hand, for 5-10 min. or until dough is smooth and feels silky. Transfer to a bowl, cover with plastic and refrigerate for at least 1 hour. Remove from the ref. and allow to rest at room temp for 15-20 min. before rolling out and cutting. To finish pasta by hand, use a rolling pin to roll pasta into a thin sheet (1/16 thick)

Dust sheet lightly with flour and then roll up (like a cigar) Slice into desired thickness. Unroll each strip, shaking pasta to unravel. To finish pasta using a machine, cut dough into 4 pieces, (keep 3 of the pieces wrapped in plastic until ready to use.) Set machine rollers so they are opened to the widest setting. Flatten portion of dough, dust lightly with flour and pass through the rollers. Lay the rolled dough on a floured surface and fold in thirds to make 3 layers. Flatten again, lightly dust with more flour and pass through the machine 5-6 more times, decreasing the setting of the rollers each time, until desired thickness is reached.

I've always wanted one but never see them in Goodwill. Did I tell you that a couple weeks ago I found a like-new Mandolin Deluxe for $4.00. It has 6 blades with it. When I got it to the check-out she said that yellow stickers were half-price. I was so excited. DH was thrilled too. I think I'll let him try it out first, seeing as how I cut myself on the razor sharp blades before I even got it to the check-out. :-( yes it's VERY sharp. Probably why it was there. It "bit" it's last owner!

Alee...HA like I really need the pasta! but it is going to be soooooooo fun, even if I make a mess a few times figuring it out! Get one and we can post our results and tips.

I will TRY to make some this weekend, the key word here is TRY lol!
I may try to make what looks like, from several recipes online, s simple whole wheat dough and see how it goes. I'll start a handmade pasta thread once I have something to post =)

Annika-My DH found one on the for sale board at his work and picked it up for me, I just love the thing! I have only made a few batches, but the one that I made with semolina flour didn't seem to work as well for me. When you make this recipe please post the results, I am curious if the problem was me (most likely) or the semolina flour. We have on the menu this month (we make a monthly menu here) butternut stuffed ravioli I can't wait to try making it!

this would make a good thread. i have a pasta making machine and some wonderful pics of my mom making pasta with my youngest. we always make spinach pasta and it is very simple. of course everyone calls it green sgetti. anyway, your recipes sounds great. i have never made raviola but would love to.

I have ne as well. I sometimes foret I have it, & when I pull it out & use it, I wonder why I don't everyday...Makes me feel very Italian..even though I am German, Swiss & English

I love making my own pasta. No comparison to store bought. I just use very simple recipe, 2 cups flour to 1 cup water. I can't wait to try your recipe. One tip I did learn is let your pasta partially dry after rolled in flat sheets before cutting. It helped tremendously. Have fun with the new gadget.
