Posted - Mar 07 2010 : 04:53:14 AM Hi all you jam makers. I know some are just starting out, but I make all my jams and jellies using apple syrup for pectin. Takes a bit longer, but you use sugar to taste. So you use alot less sugar. I make the syrup from crab apples. Just a thought. Michele |

Posted - Mar 03 2010 : 6:45:24 PM Hi! Jam-making is one of my favorite hobbies! The Blue Ball book is the "Bible" of canning, but it's fun to search the web...I have found some neat tips there. I give jam as gifts every year, and the low-sugar pectin recipes tend to be the favorite - you can taste more of the fruit and it isn't too sweet. Good luck - bet you'll be hooked after the first batch! ;)

Posted - Mar 03 2010 : 1:05:35 PM One of my favorite canning books is "The Complete Book of Small-Batch Preserving." I sometimes like not having to can so much at one time, since it is just DH and I!! I do also use the Ball Blue Book, great recipes!

It has great canning recipes for all kinds of jams, jellies, chutney's, pickles, soups, sauces, veggies, etc. It is very helpful especially if you haven't done it before because it has lots of "how-to" tips in it. :)
