Posted - Feb 28 2010 : 6:18:35 PM Usually it would be morels. My husband is leading three forays this spring for morels but I think the nettles will be out first and will try them. Had a taste last year and thought I'd try them this year. JoAnn |

Posted - Feb 28 2010 : 07:56:21 AM My favorite "spring feast" is wilted dandelion greens, fresh baby creamed peas over new potatoes...this meal always brings back memories of gathering the baby dandelion greens with my mom and the way my daddy was always so pleased with this simple meal.

Posted - Feb 25 2010 : 2:58:01 PM Wow, now that sounds good! My favorite spring treat are what my family calls kale-bugs! They are actually kale buds, but back when my baby brother couldn't say buds it was bugs :). Anyway, as the kale bolts we pick the tender steams with before the buds burst open sort of like brocoli rabe. We saute them in a little butter, salt, and pepper. Yummy! If spring had a flavor that would be it. Has anyone else discovered 'kale-buds'? I had some mizuna bolting in the garden the other day and I tried the same thing with them and they were just as good! I think I'd better keep experimenting with this.....
