My boyfriend asked if I could make homemade tomato soup with the tomatoes I canned last fall. He said his mother used to make it starting with a rue (flour, milk, butter, I think) then pushing the tomatoes through a strainer. I don't know what other ingredients should go in it. Have any of you ladies ever made it?

Our family favorite Tomato Soup is made from our Roasted Tomatoes http://herbalmommasda.blogspot.com/2008/09/tomato-day.html
Puree one quart Roasted Tomatoes
Add 2 cups cream or half n half and 1 teaspoon salt.
Heat gently over medium heat.

We love it with toasted Grilled Cheese Sandwiches. :)

Cream cheese would also be a great addition. I taste it's creaminess now....

the last time i made tomato soup, i added some cubes of cream cheese at the end... came out yummy! i've never tried the rue, but i bet that thickens it up nicely! i've also seen heavy cream added at the end.

i saute some onion and celery till they are nice and soft, simmer those with the tomatoes and spices (same as you gals, italian seasonings) till tomatoes get soft, puree everything in the blender, return to a simmer and add cream, milk, cream cheese, or what-have-you.... yum!

I make tomato soup all the time from canned tomatoes. I put the tomatoes in a crock pot to simmer down for a few hours. I add a cube of sugar or two depending on the amount. That cuts the adicity. I also add seasonings like salt and usually italian seasoning, only a little. I also like to give it a teeny dash of cayennne. It perks it without getting hot. When its cooked down after a few hours I take my handy immersion blender and puree it. You could do this in a blender, just leave the lid ajar and put a towel over the top to protect yourself from hot spinning soup! I occassionally add cream at the very end if I want a bisque. Anyway, its yummy. I never make a roux to tomato soup. I add pepper at the end of cooking and it tastes better.
