I have a friend that needs to eat a gluten free diet. Can you use organic flour to bake or can they not eat any baked items at all?

That is one of the books I have on hold at the library, I think there is one hold before mine so it might be a month or two before I get it but I'm super excited, it sounds really practical! I will check out her website as well, I didn't know there was one!

You must get the cookbook Gluten Free on a Shoestring as well as visit her website: http://glutenfreeonashoestring.com/

It is a great cookbook with all the traditional "comfort" foods as well as restaurant type foods but made gluten free--the best part, the recipes don't require a whole bunch of fancy products. She also has a whole chapter on how to save money buying gluten free products.

She also has a blog that you can sign up for, and you'll get daily recipes.

Actually, oats are now considered ok if they are processed in a wheat-free facility. I eat gluten free oatmeal for breakfast, and it's fine. I also grind it up to make oat flout which works well too.

I bake almost exclusively with Almond flour, Coconut Flour or Buckwheat flour. Hhere is a great site with awesome Gluten-free recipes called Elana's Pantry: http://www.elanaspantry.com/

I thought I'd bump up this topic as there has been so much talk about gluten free. I want to go gluten free, any tips on how to start? Especially with your family very accustomed to bread? Any tips would be welcome! :)

I Think Gluten free girls cook book is not out yet. If it is her publishers FAST! :) Another good book for recipes is any one of the cook books by bette hagman. She is the gluten free gourmet.I Have had lots of success with her recipes. I would be interested in both knowing who makes mixes and about that to die for chocolate cake. :) In fact any good recipe finds would perk my interest. :) I did see Mary Jane has a GF mix in the store but have no idea about it really. Im thinking kinda like bisquick???? In am currently on the quest to put together my own meal mixes to save money. GF cooking gets expensive fast. And coupons are hard to come by.

i lived gluten free for 3 years. it was that i was anemic. they believed it was a gluten thing. it was not in the end. i was very careful with my diet. i had no and i mean no iron in me. no blood either. for me it was not celiac. i learned all kinds of great recipes. one flourless chocolate cake to die for. yum here we have restaurants with gluten free foods on the menu. outback stk house. we have a family that is all celiac and they own an amazing restaurant.miranda is right. there are many choices these days for celiacs. we have a health store here. they color coded all the foods that were gluten free all through the store. it made it so easy to shop. i know if i had a friend willing to support such a big life change i would feel honored by her. this is great you care. celiac.com is a safe direct site.we even have support groups here. wheat seems to be in many package foods even flavor enhancers and drinks. just a thought sherrye

it is for medical. I just emailed the 2 web sites that you gave me and there is a farmgirl that has gluten free mixes and my friend has ordered her catalog. I am going to see if the cookbook the glutenfree girl is at our book store so I can get it for her.

No whole flour and no spelt!!!! spelt is a wheat flour cousin. it still contains gluten. your friend can have rice flour, brown rice flour, sweet rice flour, buckwheat(dont mind the name its not actually a wheat). Sourgum,almond flour,corn starch,corn flour,millet, most all bean flours as long as wheat is not added to them,amaranth, coconut flour. There are a few more but thats a start for you. You can also find flour replacing mixes in store. Most alternative flours dont transfer cup for cup you need to mix. I have a good base flour mix if you want. Be careful cooking for a gluten free friend watch your ingredients carefully. They very literally add wheat to things that should never have it added in the first place as fillers and non stick agents and as flavor additives. Its insane. I suppose I should have asked if this was for medical reasons or just a diet before I go freaking out . I do this because gluten makes me very sick so i have to be strict. Maybe thats not the same for your friend....?

Oh, I forgot to mention, you can get super creative with protein powder as well. When I do the low carb thing, I make pancakes, muffins, & many other things with whey protein powder.

You can use spelt flour, & soy flour. Of the 2, the spelt is the best match, in my opinion

No flour. Very few other grains. Have to be quite picky. There's a great website that sends out weekly gluten free recipes to your email..... livingwithout.com

Whole Foods grocery chains carry a lot of gluten free baked goods and mixes. I can't answer the question about the flour, but there are a lot of stores carrying gluten free mixes nowadays too.
