Ok, I made the pickled eggs from the 2 recipes I got from my other post. They are so good. I just sent them on the road with Truckin' Man today.

My question is, can I reuse the juice? There is a lot left over so I wondered if I could just boil more eggs and plop them in the jar. Maybe do that a few times til it loses it's flavor? Anyway, just a thought. It's my first time ever pickling eggs.

Sarah, I did everything except did not put the beets in. Just the juice. Very pretty pink eggs. And when you cut them open the yolks look really bright orange and looks good with the pink.

Yes. My mom always reused the juice once or twice before throwing away. I made my eggs that day that you mentioned it too. YUM! It's been so long, but they were oh so good!

Melody, that's what I did! They are really pretty. But my hubby didn't even mention the color, silly man. I guess he just doesn't care what they look like as long as they taste good. I just hope when it come out the other end he doesn't freak out! I do.

Thanks, Vickie. I just hate to waste all that juice when it is still good. So I will keep it in the fridge til I make some more.

I do reuse my juice and have never had any problems. I reuse it until I feel it looks 'yucky' then I chunk it and start all over.

I have a funny story for you and it's about my yearly contribution of my famous pickled eggs for the guys fishing trip...

I would make the standard tried and true recipe for pickled eggs, put them in a huge jar, and they would enjoy them while fishing. One year I decided to be a little more creative and decided to add just a smidge of beet juice to the mix....Yep....Pink Eggs every last one of them...
Pink as a babies bottom! The guys did not like it one bit, but I thought they were beautiful!
