 Kale and Bok Choi - ideas?

I've never made kale before and I've only sauted Bok Choi so I'm looking for advice on a good way to eat these greens. I was thinking about a potato soup with garlic, kale and bok choi. Any other ideas? I could use some dinner suggestions!

Kimberly Ann, I've never though about mixing the two together, I've only ever cooked them seperately. Now that you mention it though I think they would be very tastey sauted together. I'm going to try it! I usually saute kale with garlic, olive oil, salt and pepper, and then add a splash of balsamic vinegar at the very end. Bok Choi I do the same only I add tamari at then end. I'm thinking that both sauted together would be great either way!

I put kale in soups, spaghetti sauce, chili that kind of thing. Also, traditionally we used to have steamed kale mixed with mashed potatoes with rookwurst sausage. Then we would have vinegar and mustard with it. My parents were both dutch and they had this growing up so we did too. yummy.

Kale is great sauteed HOT with olive oil, garlic, and a little lemon juice and salt.

I also love curly kale in chicken noodle soup.

Bok choi is nice in stir frys. I like to use it instead of cabbage.

Like all greens, both can be creamed as well.

Kale is great in soups because it can stand some cooking and wont disintegrate.

Bok Choy is good stir fried in any Asian style recipe. Kale can be added to any soup or stew. It has more fiber than cabbage, so it takes longer to break down. I wilt it in olive oil, then add water and cover it to finish cooking.
I used to make a soup that was sooo good. I did not measure it, though. It's kind of a recipe for winging it!
Saute onions and garlic in butter, olive oil, and salt. I used a lot.
Boil potatoes as for mashed potoates, or a tiny bit more firm
Steam greens to just tender- kale, collards, chard, add parsely/ spinach/ cilantro at the end. I have added broccoli, too. Use what you have.
Blend these together a bit at a time in a blender or food processor until all is pureed.
Return to pot, and heat through. Add salt, pepper, olive oil, and or butter as needed. I always added fresh lemon juice to bring out the flavor of the greens, and I used the seasoned salt Herbamare.

Bok Choi is great steamed with a little butter and a dash of pepper. My daughter thought it tasted like spinach. Yummy good. Do with Kale what you might do with cabbage. MB

I've never cooked with Bok Choy, but here's a recipe for traditional Irish Colcannon which will use your kale. Goes great with a corned beef brisket. I love it!
