Posted - Jan 23 2010 : 09:53:42 AM This is the best easiest recipe for chicken nuggets I have ever had. My family calls them chicken "nuts" because when my son was young, that's what he called them, and it stuck! All my grandchildren- who are all under 8, LOVE these! They taste so much better than frozen ones, and are also healthier. 1 lb. chicken white meat tenders, cut in chunks 1/2 cup Italian bread crumbs 1/4 cup grated Parmesan 1 tsp. paprika pepper Mix dry ingredients together. Roll chicken in enough melted butter to coat, then roll in crumb mixture. Bake in a greased pan at 400 for 15-20 minutes. My oldest daughter(a perfectionist) rolls each individual chunk separetely, but I usually dump the chicken and melted butter in the greased pan, mix with my hands, then do the same with the crumbs... Oh, and I usually double the batch, cause I love leftovers!
