Also I have so many eggs right now and thought maybe I could pickle them. So does anyone have a good pickled egg recipe?

I just happened to have madeira on hand (my boyfriend likes it as an aperitif for special occasions), but you can substitute white wine, red wine, or cooking sherry. The madeira DOES give it a distinctive, slightly sweet taste, though, so I recommend it! |

Posted - Jan 22 2010 : 3:14:34 PM This is my recipe for Crock Pot French onion soup...its really good and now I'm going to have to make some for myself because I can't quit thinking about it. ha! Went through my recipes and found one for some good sourdough bread and need to make it too. ;)
2 T. butter
1 lb. onions
2½ c. chicken broth
1 bay leaf
salt & pepper to taste
4 slices french bread
1 c. shredded cheddar
Melt butter over medium heat. Add onions & cook 8 minutes, until golden brown. Add broth, bay leaf, salt & pepper. Bring to a boil and transfer to slow cooker for 7-10 hours on low. To serve, preheat broiler to high. Put bread in an oven proof bowl, sprinkle cheese on top, pour soup over the bread & cheese. Place under broiler until cheese is golden.

Posted - Jan 21 2010 : 01:07:04 AM I make my french onion soup pretty simply and it is ALWAYS yummy!
I slice a few onions very thinly. And add them to my soup pot with a little butter and a little salt and cook them "low and slow" until they are well cooked and "caramelized". Increas teh heat to medium and Sprinkle the cooked onion with 1-2 tablespoons of flour and stir. I then deglaze the pot buy adding about 1/2 a cup of Sherry or red wine. Allow this to bubble and cook until it thickens slightly. I then add Beef STOCK. Homemade or storebought is fine. I just add it until it looks right depending on the amount of onions I use. Add a bit of herbs such as oregano, bay, and/or thyme. Simmer on the stove at least 20 minutes to allow the flavors to meld.
I usually take a slice of thin french or italian bread and top it with a cheese (provolone, swiss, fontina etc) and place it under the broiler til just melted. Pour the soup into bowls and add the cheesy bread and enjoy!

Posted - Jan 20 2010 : 5:53:41 PM You can also freeze eggs. I'll beat up a couple and put them into ziploc bags. Then when I need them for cooking, I just pull them out for 15 minutes and add them to the recipe. This has saved my backside when I was out.

Can these eggs be canned if I want to do more that a dozen? And would I just hot water bath them?

Posted - Jan 20 2010 : 12:07:19 PM Hi Farmgirls - I have used this pickled egg recipe for years, I think it came from the Betty Crocker cookbook. 6 hard boiled eggs 1 cup cider vinegar 1 cup beet liquid 1/3 cup sugar or packed brown sugar 1/2 teaspoon salt 1/4 cup chopped onion 4 whole cloves Place peeled eggs in bowl or jar. Mix vinegar, beet liquid, sugar, salt, onion and cloves. Pour over eggs, cover and refrigerate at least 2 days. I heat the liquid until sugar dissolved - cool - then pour over eggs. I have also made where I replace the cider vinegar and beet juice with 2 cups of white vinegar.

Posted - Jan 20 2010 : 12:06:38 PM OK...I found it, but it's kinda general in the way of measurements. I think mom would do a dozen at a time, but I could be wrong, it coulda been just half dozen. I just tried to call her to ask because the card I have only says "hard boiled eggs" LOL! Anyways, here's what it says:
Hard boiled eggs Small onion - sliced 1 can sliced beets with juice Vinegar (she used apple cider vinegar - I do know that) Ground cloves 3/4 cup brown sugar Salt
Put sliced onions, beets, vinegar (fill beet can 3/4 full), about 1/2 or 1 tsp cloves, brown sugar and a couple dashes of salt in a container. Stir. Add eggs and let sit a minimum of 3 days.
Hope that helps. I know my mom always made a mean pickled egg!
