I made this delicious chicken yesterday....

Herbs I harvested from my garden in 2008. Rosemary and Sage. I am grinding them in the mortar and pestle to add to the chicken. Growing your own herbs and drying them is SO much cheaper than buying them in the store. In 2008, I harvested 17 bouquets of herbs, including teas.

So I added the Rosemary and Sage, some garlic powder, sea salt and pepper. I also added fresh garlic and inserted it into the slits that I made in the chicken. I also poured some olive oil on the chicken, and a little water in the pot. It's ready to put in the fireplace!

The chicken is ready! the aroma is heavenly! I flipped it over halfway during the cooking.


My family and I can't believe the flavor of the meats when I cook in the fireplace. Cooking in the oven does not even compare whatsoever! If only you could smell the aroma, and hear the crackling- it is a beautiful thing!

Yum, yum, and yum! That looks so good I can taste it from here. I just baked my last hen last week. All day in the oven. I'm sure not near as good as yours but good. And it was one I'd raised. I'm not sure I'm ready to raise more but might have to.

A cast iron dutch oven is what we always used when we went camping. The fire does make everything taste better. Your pictures look great!! Where did you find the gloves? I have been wanting a pair but not sure where to look. Barbara
