I am making salmon for Christmas dinner. My sister who lives in Alaska and owns a Salmon canning company with her husband sent me 4 lbs of wild Alaskan Coho Salmon. This will be baked with a crab/goat cheese/bread crumb type topping. We are having a baby spinach salad with cranraisens and toasted pecans mixed with a farmgirl recipe for vinaigrette. We will also be having cornbread with honey butter, green beans with bacon pieces and almond slices and a Yukon gold/sweet potato mash - which I am looking for a possible gravy to go with. I personally don't think gravy is needed with all the rich food, but I am thinking my husband possibly my mother-in-law will be looking for gravy for the mash potatoes. So any ideas?
Also desert will be ginger bread cake, topped with homemade canned spiced peaches (warmed) with whipped cream. There will also be coffee, tea, white wine, a sorted number of soft drinks and water.
All suggestions on gravy welcomed.

Anytime GF, you tempted me with that idea, and when I went to get some sweet potatoes today, they were out at three stores!

Browned butter with sage - now that sounds good. And I actually have fresh sage in the yard, that is a good possibility. Thanks Sarah.

you are doing a sweet potato/yukon gold mash? Browned butter with sage sounds the best to me. However I would probably chop the potatoes and roast them in butter and fresh rosemary instead, then the gravy wont be necessary.

Thanks for all of the input - maybe the garlic butter would be good or I looked up some more ideas and this is "sinful" drizzle maple syrup on them since there are sweet potatoes in the mix. Wow - wouldn't that be something. Thank you all, it helps to use farm girls as a sounding board when you are trying to come up with a good idea.

I think Connie is right. Something light to go with the dinner and Au Jus on potatoes is yummy.

Anne is looking for a gravy for the mashed potatoes, not the salmon. I think a nice AuJus gravy if the MIL and DH have to have something. |

For those who need a sauce, try Alfredo sauce with a sprinkle of fresh minced basil over the top.

Girls - Dinner is at 4:30 on Christmas, we always have room for a few extra. 
I think then no gravy.

I really don't have any suggestions as far as gravy goes, I agree, you don't need it. All I need to know is what time is dinner and can you pick me up at the nearest airport? |
