Posted - Dec 19 2009 : 2:28:45 PM I'm making loaves of zucchini bread for gifts and the centers keep falling. What am i doing wrong? All my ingredients are fresh. Any helpful tips?

Posted - Dec 19 2009 : 6:38:54 PM Also if your zucchini is too wet, when you mix it in, inother words too much moisture in the mix. If so, try squeezing out most of the liquid from the grated squash before mixing in.

Posted - Dec 19 2009 : 3:47:07 PM I also read that not enough salt will cause falling. Not sure if that's true. Baking is an art for sure. I always use the amount of salt called for in the recipe. The parchment is a good idea.

Posted - Dec 19 2009 : 3:43:34 PM What kind of loaf pans are you using? Sometimes it helps if you turn the temp down a bit or wrap the outside of the pan with foil - the outer portion is baking quickly but not the center, this can cause two results, sinking in or mounding up. I always line the pans with parchement or waxed paper.

Posted - Dec 19 2009 : 2:51:08 PM I have some recipes that say that too. I made a lot of bread back in the summer and I noticed some of mine was falling in the middle. I decided to start reading all the bread info everywhere and that is one of the things I read. I only made a couple of loaves after that, but they turned out good. I do have to be careful not to bump the stove or open the door during the baking process. You might give it a try and see if it works. I feel sure there are some excellent breadmakers here and they will probably be able to tell you more. I know how frustrating it is! I sure hope when I start my baking in a couple of days it doesn't fall. I will keep an eye on this thread for sure. The tip on not greasing the sides did say to generously grease the bottom. I also use tefelon pans..... that could make a differenc. Hope we get it all figured out. Good luck and let me know if you have success next time.
