Posted - Dec 13 2009 : 08:16:49 AM Last Dec. I made the delightful sea salt caramels from the magazine recipe. The butter wrappers were cut up to wrap them in. I can't find the magazine they were in or the recipe. Can anyone post it? I want to make them for my minister and for teacher gifts. Thanks. Desiree

Also, make sure that adjustments are made for altitude:
For every 1000 feet above sea level subtract 2 degrees from temperature.

Posted - Dec 20 2009 : 2:15:56 PM Does high humidity have anything to do with the candy not setting up? I know that making divinity on a humid day makes the candy sticky.
Use parchment paper and not waxed paper to solve the sticking problem.
Just a thought.

Posted - Dec 20 2009 : 2:00:05 PM Cindy- next time you might want to grease the inside of you wax paper, but for this batch you might try warming the caramel in your hand for a second before unwrapping?

Ok so I should probably make this short but really this is one of the longest stories...I actually made my first batch from my Grandma's recipe which I dug up and which is similar and it was her birthday yesterday and she is gone now but I felt her with me anyway. Hers never set! I think I didn't get it hot enough because I was afraid of burning...It was soup! It was caramel sauce for ice cream so I put it back in the pot, kept cooking... and darned if it didn't come out great! In the meantime I tried this recipe (burned it too) but kept on like a good baking soldier and put it in a pan with waxed paper and now I am stuck literally with waxed paper on my caramels. ANY IDEAS ANY ONE OUT THERE IN CARAMEL LAND?? YIKES! I can't give this out as gifts, and it's a shame to toss it! CC

Posted - Dec 19 2009 : 9:19:02 PM Have you calibrated your candy thermometer in boiling water to make sure it's accurate? Sometimes it's the amount of moisture in the air that interferes with the process. I know fondant doesn't set well if it's damp out. Did you butter/grease your parchment paper before you poured in the candy? I would check your thermometer for sure to eliminate that possibility first.

Posted - Dec 19 2009 : 8:14:44 PM Hmm... Are you making sure to add the ingredients in the exact order that the instructions tell?
If it still hasn't set, let it come to room temperature and get it back in your pot and bring it up to a soft boil again. You should see a change in the bubbles, but don't let it go too far or burn!

Posted - Dec 19 2009 : 1:51:27 PM I made these and they never set up. I stired and cooked till 245 on the candy thermo and let them set 24 hrs and just went to cut and they are still not set. Any ideas?

As for the corn syrup, I met someone who said that there is a type of wheat syrup that could be substituted for corn syrup, though I have not found it yet. I save butter wrapper and it drives hubby crazy! I even freeze them. Maybe hubby will change his tune. ~ Mary LD

Posted - Dec 15 2009 : 08:08:58 AM 1 cup cream 1 cup sugar 3/4 cup corn syrup (I wonder if you could use maple syrup?) 1/2 cup butter 1/2 tsp. vanilla 1/2 cup chopped walnuts, optional
1. Line an 8" square pan with 2 sheets criss-crossed parchment paper. 2. Combine cream, sugar, syrup and butter in a heavy saucepan. Bring to boil over medium heat and cook, stirring, until mixture reaches 245 degrees on a candy thermometer. 3. Remove from heat and stir in vanilla and nuts. Immediately pour into pan and allow to cool at least 2 hours or overnight. 4. After it's cooled, remove from pan and cut into 4 equal lengths; then cut each of those into 10 equal pieces. 5. Wrap each piece in a 4" piece of waxed paper. Or butter wrappers.
Variations: Sea salt caramels In step 3 after caramel cools fo 30 minutes, sprinkle 1 tsp course sea salt on top, then continue cooling.
And you can pour melted chocolate over top, too.
