Ok, I have now been converted to using barley grains in everything, thanks to a great article in current Mother Earth News. I swear, it seems this stuff can work miracles and I want to eat it. Trouble is, I only have the recipes in the article. Anyone have some recipes they've actually made? I could do the google thing but untried recipes can be very hit or miss.

Soooo sorry, for the delay in printing the recipe.
I swear we all survive on hotdishes here in Minnesota,
to me it's just a way of cleaning out pantries and fridges.
This is just a good, basic hotdish. Enjoy !!

Barley Hotdish

1 lb. ground beef
1 sm chopped onion, brown with meat and drain
2 c diced celery
3/4 c barley
1 can tomato soup
1 can cream of chicken soup
1 - 2 cans of water.
Salt and pepper as desired.

Simmer for 1 hour, watch closely and stir often. Bake 1 hour at 350*. Add more water if dry.

Add water according to how thick your soup is. When I first started making this recipe years ago, the soup came out of the cans real thick (with a plop! :) ) Now you can pretty much pour the contents out of the cans. I start with one can and add more as needed.

I found some rolled barley and mix it with my oatmeal and rolled rye for a hearty breakfast. Of course, must add fruit to that.

hot barley cereal with crasins and walnuts, topped with alittle cream and honey, its great for a cold and busy day, I've even had it for a snack on those days you need more than just breakfast, supper and dinner, lol. I too make beef/barley stew/soup, yummy winter time meal.

An obvious one, but I often make an improvised veggie soup with whatever I have. I almost always have celery, carrots and onions on hand, which I boil and then blend and put back into the soup. I usually will throw some barley and lentils in (a cup or less of each). Always simple, healthy, cheap and delicious.
I have some leftover chicken broth in the fridge, so I think we'll be having some sort of barley creation tonight!

I'm cooking some up now with chicken broth and onion. I also found a recipe for meatloaf that called for cooked pearl barley instead of oatmeal and I'm going to give that try too. Gotta find ways to get this superfood into my life. Thanks everyone for the suggestions. :-)

Deb, I hope you can find the recipe for the oxtail soup. When I got my steer butchered I asked for the tail. I really had no idea what to do with it. I saw Paula Deen make something with it. I'll have to see if it comes back on. It looked so good, too. When I make bread I sometimes grind some barley up to put in.

My husband eats it before his triathlons in porridge form. You cook it overnight in a crockpot on low and then eat it in the morning with whatever things you like in oatmeal. The benefits of this for breakfast is that it sticks with you for a long time! You have to use hulled barley, not pearled.

I exchange it for rice in any recipe I have. The other day I cooked up barley and baked an acorn squash. In a frying pan, fried up onion, a little cabbage and kohlorabi (veggies I had in my fridge), seasoned with garlic powder, salt and pineapple sage. Then I cut up half the squash into chunks and threw it and the barley into the fry pan too. It was wonderful.

It diverse enough just play with it. You'll surprise yourself.

A favorite in our house is ox tail soup. I'll have to find my recipe. The hubby has been asking for it. I'll post it when I find it. I also have an old recipe from a friend Barley Pilaf. Everyone loves it - except for hubby! Funny because he loves barley!

I got a box of quick barly by mistake so I fixed it for some veg soup so that I could see what it would do to the amount of water and all I found It was good just as a hot cereal with bit of butter and brown sugar. Or what you might eat on Oatmeal

I have made a beef and barley soup:
beef soup bones to make a beef stock about 4 cups
small cooked and cubed rump roast
small onion diced
2 garlic cloves
baby carrots
i cup diced tomatoes with liquid
1/2 cup of barley
prepare beef stock
cook roast and let cool and cube
add all ingrediants into large soup pot and cook until carrots are tender and barley is cooked

Hi Kimberly Ann, My favorite soup is beef barley. I cook up either stew meat or hamburger, whatever I happen to have, and then add enough beef broth to cook the barley in. I also add some garlic, thin sliced carrots and celery and whatever herbs and seasonings you like. My Mom also used to put a handful of barley in her beef stew. Seems like every kind of soup or stew I cook I put in a little barley and a handful of wild rice, cause I really like those grains.
