I went to Thanksgiving dinner yesterday at my brothers house. He cooks for several other people. I told him in advance that if he had no other purpose for them then I would like to have the turkey carcass. So he sent me home with two that still had a lot of meat on them and a ham bone.
Now that I am a non wasting, repurposing farmgirl I would like to know what to do with this. I intend to put one turkey carcass on today for broth and make soup. I know there are many recipes online for this. I am going to be working on this food over the next few days. It is only me and my elderly mom here at my house so I would like to make some dishes that I could freeze.
I am asking if any of you do this sort of thing could you give a recipe? I am sure I am not the only one interested.

My step dad cooked our turkey. It wasn't done all the way. So I took all that was left with the carcass and had 2 huge pots. Simmered them for hours. Cooled overnight. I got 6 quart bags of broth and 2 big bags of meat. I will make pot pies with most of it. Maybe some new things with the rest.

We had a very small turkey so there wasn't much meat left. I put the carcass in a pot on the stove and cooked it all day today. Tonight I have the most wonderful turkey stock. Tomorrow night will be turkey noodle soup. I never heard of putting the dressing in the soup but I'm going to try it as I have a bunch of dressing left over.

Hmmmmmm, forgot that I used to put my leftover dressing into the soup, will do that tomorrow and it will be even better!! Thanks for the reminder Teresa!!

LaVonna, we all love it here, simple, filling and tastes so good. The stuffing really adds additional flavor and makes it nice and almost eat it with a fork thick.

Thanks, girls, this all sounds good. Teresa, this sounds really good. I have everything but the noodles. Somehow would not have thought about adding the stuffing but I am game to try it.
I love being able to eat real food on my days at home and not be tempted by fast food stops. You know, if you are out shopping and a fast food place seems like a good plan because of being fast. But then you think "oh, no, why would I get that when I have _______ at home?"

I vote for turkey tetrazini. My DGF makes the most delicious casserole. I must say my DDIL made the best turkey. She brined it overnight and roasted it to perfection. It was falling off the bones good.

I make turkey soup, the carcess goes in a pot to cook down, the bones are removed, all extra meat is added, along with the extra stuffing. I then add greenbeans and anyother veggy that is avalible, let simmer for a hour or so. I then bring to rolling boil, add wide egg noodles, and then yummy. I always freeze part of this in single servings, great for luches on cold days.
I also make tukey pot pies, the soup mix works very well for this also, and they freeze well also.

I make a yummy turkey pot pie and turkey & biscuit stew. Both are yummy and make great leftovers of their own! We use the leftover carcass for stock too.
