Posted - Nov 21 2009 : 8:05:44 PM I brought this over from my facebook page because it is SOOOOOO good and lemony and such a quick gift or something to whip up for a holiday breakfast or tea party! YUM!
Lemon Curd
1/2 cup fresh lemon juice 2 teaspoons grated fresh lemon zest 1/2 cup sugar 3 large eggs 3/4 stick (6 tablespoons) unsalted butter, cut into bits
Mix together juice and lemon zest, sugar, and eggs in a 2-quart heavy saucepan.Mix in butter and cook over medium low heat, whisking all the while, until lemon curd is thickening and holds the marks of the whisk on the surface (5-6 minutes) It shouldn't be allowed to boil, just to the point of a pre-boil. DON"T LET IT BURN !!! Spoon into a clean jar or bowl and cover with plastic wrap, chill about 1 hour. It will keep about two weeks in the fridge, but it probably won't last that long! =D
Recipe is from my head, can't find the original nor remember where I found it...if I made a mistake, it should taste yummy anyway =P I'll keep looking for the original...it is wickedly easy to make! I think I got this version from a holiday cooking magazine, but I just found one in one of my UK cook books and it seems pretty much the same. Give it a try! ![](icons/icon_smile_big.gif)

Posted - Nov 24 2009 : 06:15:34 AM That sounds like the same recipe my hubby uses when he makes Lemon curd. I think homemade Lemon curd is so much better than store bought! I like to eat it in rice pudding.
