Hello!

I make my own hot cocoa mix (have for years) which is delicious. The first time my kids had store bought hot cocoa at a friend's house, they thought that it was the WORST tasting stuff ever!

That being said, I'm not crazy about the non-dairy creamer in the recipe (which is below). Does anyone know of a good alternative for that?

Thanks!

Vanessa

1 cup cocoa powder
2 cups non-fat dry milk
2 cups non-dairy creamer
2 1/2 cups sugar

Sift cocoa powder into a large container or zip-lock bag; add all other ingredients; shake & mix well.

Fill a mug 1/2 full (at least!) with mix, add boiling water, top off with milk to cool and then top off with real whipped cream and chocolate shavings!

I have to say, that video is not a shock to me. I think I've seen that before... in my OWN backyard! I have 3 teenage boys too and my oldest son.... well... lets just say he's just about done it all. That's why I have so much GRAY HAIR! Anyway, that said, Great recipes for cocoa.

And Deb, thanks for the info. Good to know! Needless to say, I don't use artificial ANYTHING if I can help it. I mostly use half and half, silk coffee creamer or, (GASP!!!) whole cream in my favorite Chai tea!!! YUMMY!!!!!! Thanks for sharing ladies! Think I'll go make myself a cup of cocoa.... (LOL!!)

I make homemade hot chocolate from a recipe on the cocoa can. It's just cocoa, milk and sugar. Yummy!

1 tbsp. cocoa powder
2 tbsp. sugar
1 c. milk
a bit of vanilla, if desired

Wow Deb, I never got into the whole milk theory before. I just know I hate lowfat milk. I always buy half and half and use it for everything. If a recipe calls for whole milk I just add a little water to it. The reason I buy half and half is because I never have to throw any away. It last for weeks in the refrigerator. I buy in bulk,so I pick up about eight quarts at a time. Now my real goal would be to have a milk cow and a cream seperater but that's not happening yet. I also only use real butter because I have read about what the fake stuff does to your arteries. MELTED CHOCOATE BAR AND HOT MILK..... YUM. Especially if its dark chocolate.

Enjoy the little things, for one day you may look back and realize they were the big things.

With 3 teenage boys at home, I won't be showing them that video; although they love the MB show so they have probably seen it. If you hear a loud explosion, it's just my oldest blowing up his morning cup of cocoa!

I've given it as gift for years and my kids even like it in the summer, but I am going to have to think about my homemade cocoa mix. Not only the non-dairy creamer but also the powdered milk is something to consider, especially if a lot is consumed. I see a balance project in the making.....

Thanks for this great discussion, suggestions, info, and wild video!

Ha! Good video but I agree about not trying that at home! Not unless you have good insurance and actually WANT a new home...

Powdered milk is convenient for its low price and long shelf life. Beyond that, I can't say much good about anything "powdered", especiallly milk. One of the processes in making powdered milk removes almost all the milk fat before it is powdered. That makes powdered milk a weak substitute for cooking and baking recipes which require whole milk. The milk fat gives recipes (baked items, especially) a certain consistency that cannot be found without fat. If you are out of whole milk and in a bind, you can substitute powdered milk for whole milk by adding butter, 1 TBSP per 1 quart of milk. It should always be real butter, not margarine (oleo).

BUT -- the process of drying milk isn't a good one. Liquid milk is forced through a tiny hole at high pressure, and then blown out into the air. This causes a lot of nitrates to form and cholesterol contained in the milk is oxidized. Believe it or not, cholesterol is your best friend; you don't have to worry about naturally occurring cholesterol in your food; what you don't want to eat is oxidized cholesterol. Oxidized cholesterol is responsible for the buildup of plaque in the arteries, and then atherosclerosis. So ... when you're drinking reduced-fat (2%) milk thinking that it will help you avoid heart disease, you are really consuming oxidized cholesterol. That is what begins the process of heart disease.

That being said, why not just mix a melted chocolate bar, like Nestle milk chocolate, into some warm/almost hot milk? Still not a good thing to be consuming, but what a beeeeeeaaauuutiful winter treat!

My mom used to make hot cocoa mix with just powdered milk, no artifical creamer.

Is this for gifts (so it has to be powdered) or just for you own use? I ask because I make my hot cocoa on a cup by cup basis, like tea. Just a teaspoon of powdered cocoa, a teaspoon of sugar, several shakes from the cinammon jar, and then add half hot water and half milk (actually, I use vanilla soy milk).

It will make you think twice about ever using non-dairy creamer again! I'd go with powdered milk!

hey Vanessa,
thanx for your recipe..
I have a different one/version:
1/4 cup cocoa powder
dash of salt
1 cup powdered sugar
2 cups powdered milk
(for a more creamier mixture you can add a 1/3 cup of powdered non-dairy creamer or 1tblsp of malted milk powder.
Then mix up well & store in an air tight container.
To make a cup of hot cocoa add 3-4tblsp of mix to 6-8oz of boiling water. Stir, add marshmellows, snuggle up w/a good book and enjoy!
Infact why not make a small container of the cocoa mix and put it in a cute holiday mug along w/a pepermint stick or candy cane & give to a friend this holoiday season....(I found this recipe many years ago in the newspaper...in Heloise's column).
Heloise also has one for flavored coffee....I have used it for many a baby shower "mommy gifts'...by putting the mix into a plastic baby bottle w/a note that reads "Just a little something for you to have while you're preparing those 3 a.m. bottles for your wee one...if the crying doesn't keep you awake, the caffeine will!".
here is the recipes for Mocha Cafe & Vienna Cafe'
Mocha Cafe'
1/4 c. instant coffee granules
1/4 c. sugar
1/2 c. powdered milk or powered coffee creamer
1 tblsp. cocoa powder
mix well & store in air tight container.
Vienna Cafe'
1/2 c inst. coffee granules
2/3 c. plus 1 tblsp. sugar
2/3 c. powdered milk or coffee creamer
1/2 tsp cinnamon
mix & store in air tight container...
To enjoy just add 2 heaping tsp of mix to a 6-8oz cup of boiling water(according to your taste). Now relax, put your feet up & enjoy!
