Posted - Nov 16 2009 : 5:19:46 PM Came in from the porch to share my top secret recipe for Rosemary Cashews. They are a favorite here and sooooooo simple.
1 1/4 pounds roasted cashews 2 Tablespoons coarsely chopped fresh rosemary 1/2 tsp cayenne pepper 2 tsp dark brn sugar 2 tsp Kosher salt 1 Tablespoon butter, melted
Preheat oven to 375 degrees. Place nuts on ungreased cookie sheet and bake 10 minutes or until warm through. Meanwhile, combine rosemary, pepper, sugar, salt and melted butter in large bowl. Toss warmed nuts in mixture till well coated. Best served warm.

I had one guest say "forget dinner,..I just want these cashews!" So thank you for the awesome recipe. I think they will be a new tradition at our house.

Posted - Nov 17 2009 : 10:14:32 AM Another thing that's really good on cashews is cracked black pepper, or I sometimes buy the mix of black, red, white and green peppercorns and grind it myself (onto the cashews after they've been roasting for a while). YUM!
I also usually soak the nuts (germinate) in sea salt water (overnight) before roasting in a 150-200 degree oven for 6-24 hours, depending. Then while they're roasting I add flavorful stuff.
