Now, I don't know if you've begun to experiment with making ice cream out of all that milk yet. But I imagine one day you will; and when you do, you need this. It was taken from the Silver Palate Good Times Cookbook, and it's exquisite. Thick, rich, with a light 'string' to it. My oh my, it's the best hot fudge sauce I've ever had, anytime, anywhere, hands down.

Here you go!


Old Fashioned Fudge Sauce

6T (3/4 stick) unsalted butter (bet you'll have plenty)
3 oz unsweetened chocolate, chopped
4 oz German's sweet chocolate, chopped
1/2 c sugar
1T instant coffee powder (don't leave this out; it makes it very rich and complex)
5 oz evaporated milk (we always used it straight from the cow, heck with evaporated when you have a Jersey!)
1/3 c heavy or whipping cream (straight from skimming, it's wonderful)
1t vanilla

1. Melt the butter in a medium sized saucepan. Remove from heat and stir in both chocolates, the sugar, coffee, evaporated milk, and cream. Heat to boiling over medium-high heat, stirring constantly. Reduce heat to low and simmer for 10 minutes, stirring constantly. Remove from heat and stir in the vanilla.

2. Serve the sauce immediately, or refrigerate covered up to two weeks. Warm the sauce in the top of a double boiler over simmering water. (Heck, we poured it into canning jars and refrigerated it, and then nuked it when we wanted some, without the lids of course.)

Now resist the urge to eat it out of the jar!
