I have plenty of appetizer, light meal type recipes for them.
I have a bag I want to soak tonight, and would like to make dinner with tomorrow night.
Who has some recipes for main dishes using black beans? I would welcome all!

From The Gluten-Free Nutrition Guide by Tricia Thompson, MS, RD 30 minutes prep time | Serves 4 What you need:
12 whole-grain corn tortillas 2 (19 oz) cans black beans, rinsed and drained 1 medium yellow onion, diced ¾ c frozen corn 1 red bell pepper, diced 1 green bell pepper, diced 1 c shredded cooked chicken 4 oz low-fat Monterey Jack cheese, grated 1 medium tomato, diced 1 avocado, diced Gluten-free salsa What you do: 1. Preheat oven to 350°. In shallow, medium baking dish, arrange layer of 4 tortillas, and top with one-third of beans, onion, corn, peppers, chicken, and cheese. Repeat with two more layers of each ingredient. 2. Cover tightly with aluminum foil and bake 50 minutes. Let dish set 5 minutes before serving. Top each portion with tomato, avocado, and salsa.

Posted - Nov 06 2009 : 06:29:44 AM My B-I-L makes a chicken - black bean soup. I haven't made this myself, but LOVE this soup...the absolute amounts aren't listed, so quantity will be something you can decide...his soup is at least 8 qts. so the amounts of liquid would be according to your household's requirements.
Cube 1 lb chicken breasts and brown Add chicken broth (I'd say he used @ least 2 - 32oz containers) black beans corn (frozen, fresh, canned - whatever your preference) he used a bag of frozen
Rotel tomatoes - he used 2 cans
chili powder (to taste) I'd say he used 1TBSP minimum, (folks here in the south like their foods spicey)
cumin (to taste) (the one thing my B-I-L showed me when I asked him about his soup was the cumin was at least 3 TBSP. We love it, and the chili powder, but the quantities will be to individual taste)
And then just simmer it on the stove. They put tortilla chips in the bowl, add the soup top with jalapeno jack cheese (or cheese of your choice) A wedge of avocado on top would be great too!
