Here we go.

Peach salsa:
1/2 cup white vinegar
6 cups chopped pitted peeled peaches
1 1/4 cups chopped red onion
4 jalapeno peppers (I didn't add these)
1 red bell pepper
1/2 cup loosely packed chopped cilantro
2 tbsp honey
1 clove garlic
1 1/2 tsp cumin
1/2 tsp cayenne pepper.
bring to boil. reduce heat and simmer 5 minutes until slightly thick.

water bath for 15 minutes.

Peach BBQ sauce: This is my new friend. I put it int eh meatloaf the other night and it was wonderful!!

6 cups finely chopped pitted peeled peaches
1 cup red bell pepper
1 cup onion finely chopped
3 tbsp garlic finely chopped
1 1/4 cups liquid honey
3/4 cup cider vinegar
1 tbsp worcertershire sauce
2 tsp dry mustard
2 tsp salt
Bring it all to a boil and cook about 30 minutes to thicken.
water bath for 15 minutes

WOW, I am just starting to learn to can. I canned 7 pts of hamburger soup and I am so proud with it on the shelf. I am planning to do alot more soups. I would rather take that to work for lunch than go to the cafeteria and it is alot cheaper too. thanks for the inspiration. I can not wait until next year to do alot more.

Wow - I was happy with just the small amount I canned this year. You put me to shame :)

Peach Salsa and the Peach BBQ sauce, yes please post recipes.

I did manage to make and can over 3 gallons of grape juice - that's allot for two people.

i did no canning this year. i am disappointed in that. good for you. i am dizzt reading all of that. in my hippie days i once canned 1500 jars from my garden. i sure could not do it now. i want to eat at your house girl. kris some of the tougher cuts of your steer could be canned. mom always did that with some of the elk deer and always the bear meat. when in a hurry the meat is already cooked and tender. i am butchering fryer/roasters today. they weigh 7 pounds. lol sherryr

Some year I will have to write down and keep track of exactly how much I can. Never have. I know I canned more this year than any year ever. I have never run completely out of jars before this year and I have hundreds of jars. Isn't a good feeling to be stocked up????

Fabulous achievement. I feel like such a slacker!!! I dont know how much i did but it filled up a 6ft.by 4ft. 8 section metal shelf. one question when do you sleep?

i got tired just reading the list! way to go girl! i only canned some pear butter this year before my oven blew (and still have not replaced it)and that wore me out...cannot imagine doing 1/3 of what you did...what a tremendous accomplishment!

It looks like you have been a busy bee. Storing up for the winter. Don't you just feel so good when you see all those pretty jars all lined up on the shelves? I love it. Good for you.

I did nothing this year. I had 2 huge gardens and sold everything at the farmer's market. I had lots canned and in the freezer feom last year so I was ok. Now next year I will have to start over again. I need to go through my freezers and do some checking. I had to put my whole cow in my friends chest freezer til I can make room in mine.

What a great way to start off the winter! Your grocery bills will make most green with envy!

What are cherry olives? The peach salsa sound great.

We've got two freezers so I started out with them, my new seal-a-meal got a good workout. Stuff should keep a lot better than in regular bags. But now we need to squeeze in a quarter of beef too and it will be really tight! I've used all my canning jars and hope to find some at garage sales this winter and spring.
I've never canned soups but they would be great to have on hand!
This is the first year I've done apple butter in the crockpot, it worked out well, and will add variety to the jams; raspberry, strawberry and strawberry rhubarb.
I also canned raspberry juice in 1/2 pt jars to mix with apple juice as we need it.
We've got apples, potatoes, carrots and onions in the basement and will need to insulate a corner as root cellar before we need the wood furnace.

It's called mom lives across the street. Both of our houses are rather full. I dehydrate a lot too. Especially fruit roll ups. Those haven't lasted as mom loves them. I'm having to hide some so we will have them later this winter. hehe.

I was going to say, my grandmother had the "south kitchen" which was really just a pantry with a freezer and a table and chairs. That was where she stored her hundreds of jars. I use just my bottom cabinets and though I did salsa, pickles, some jam and apple butter I didnt have room to do all I wanted. I envy you, you did a great job this year!

So far my canning totals 505 jars of canned items. I am not quite finished yet though, there is still 1- 20 lb pumpkin, saurkraut, and horseradish waiting to be canned. This does not include the items that were frozen instead of canned, like corn, green beans, carrots, strawberries, blueberries and such. My pantry and veggie freezer are completely full. WooHoo!
