Posted - Oct 24 2009 : 11:39:54 AM ok, so i want to try my hand at making pumpkin seeds from my pumpkins. i have some yummy looking recipes from various sources. problem is, i'm not sure if they are using pumpkin seeds from the store that are already dried out? it doesn't say anything about if you want to substitute seeds from a fresh pumpkin... SO... do i need to dry out my seeds first before using them in these recipes? how do you dry them.. in the oven or just naturally over time? or could you use fresh, moist seeds directly from the pumpkin? HELP!!!

Posted - Oct 26 2009 : 07:58:39 AM I simply pull off the strings and chunks, but do not rinse them or dry them. Then I spread them evenly on a cookie sheet, sprinkle a little salt and bake them at 350" for about 10 minutes. Then I stir them with a spatula, leave them in for another 5 or so minutes, and check to see if they are dry and crispy. At that point, they are usually perfect for my taste. I like the pumpkin flavor that comes from not rinsing, and it means not having to use oil or anything. My simple approach has us eating pumpkin seeds 1/2 hour after carving the pumpkin.

Posted - Oct 25 2009 : 10:34:10 AM I made the pumpkin butter I asked about yesterday. I loosely used the recipe on allrecipes.com and in the sidebar they had instructions for pumpkin seed roasting.
Before anyone asks, I have not sampled the butter yet. I am letting it mellow out in the fridge first. LaVonna

Posted - Oct 25 2009 : 05:41:17 AM I have never peeled them. I just eat them whole. If you cook them enough that they are crispy and not chewy they taste great!

Posted - Oct 24 2009 : 9:49:46 PM Wouldt most recipes call for "peeled" pumpkin seeds? When I bake poumpkin seeds I eat the whole thing. Shell and all. Do you gals eat it all or peel them somehow? |

Posted - Oct 24 2009 : 9:36:07 PM I do the same as Julie. Never have followed a recipe, I just give them a little massage of olive oil, some sea salt and a bit of pepper. Bake them in a hot oven, about 400 usually, till they turn golden brown. They will continue to cook and brown more after you take them out so don't let them go too long.
One funny thing...I roasted some Kabocha squash seeds a few days ago and found out that they pop like corn! Boy, did it make a mess of my oven but they taste just the same as pumpkin seeds.

Posted - Oct 24 2009 : 12:08:10 PM I rinse mine and then dry them overnight on a cookie sheet. Then I bake them according to the recipe directions.
