I'm really new at canning, and I just made my very first batch of homemade applesauce last night. It is very thin & watery. I cooked the apples in a little water until they were mushy then put them through a Foley food mill.
First, what did I do wrong, and second, is there anything I can do to salvage this batch?

Posted - Oct 13 2009 : 10:45:17 PM Putting in a roaster in the oven will help it to thicken up without scorching the bottom. Just give it a stir every once in awhile until it is as thick as you like.

Posted - Oct 13 2009 : 04:47:52 AM I didn't strain them because they were already real mushy. Maybe I cooked them too long. I only used about an inch of water also. I did about 1/4 bushel in the pot. I'll try cooking them less next time and draining some of the liquid before I put them through the mill. One of the girls I work with suggested putting the sauce back on the stove and simmering it without a lid to see if some of the liquid would evaporate. Guess it's worth a try!

Posted - Oct 13 2009 : 04:45:12 AM Did you strain your apples before you put them through the mill? How long did you cook them? I always do a whole pot of apples with just about 1 inch of water in the bottom of the pot. Then I only cook them on high for about 15 min. stirring it a few times. Then I do strain them to get all the juice out. No idea's on salvaging your batch!!! |
