I was just given about 15 pounds of raw almonds Does anyone know what to do with that many nuts? I tried to roast 1 pound in the oven off a recipe from the internet. You oiled them, roasted them and then applied seasoning. All I got was plain almonds in a baggie with the seasoning all to the bottom. I can freeze some for winter baking but 15 pounds? Help!

Yes, alwyas the case here too....especially in the summer when i should be canning like crazy and either can't find the time (don't want to be inside on beautiful days) or it all comes in so fast I can only do so much!

There was also a great recipe in September's Cooking Light for Rosemary Almonds which I was going to make for my husband. He loves ANY kind of nuts!

It was very simple, and I had everything on hand but I just haven't had the opportunity to make them yet!

If you have a food processor or blender you can make a very easy almond butter

Use a little oil of your choosing and blend till creamy

Add a little salt while blending if you want salt...or toast the almonds on a cookie pan first, lightly salt while toasting then blend

See that's the problem they are raw almonds, they have no taste really. I mean I can eat some but, not tons that way. I'm gonna try the recipes the ladies have posted. Then I can serve all that, there will be almonds in so many ways in pretty bowls!

LaVonna, almonds are NOT the pit of a fruit, they grow on trees just like pecans or walnuts, etc.

All of this sounds wonderful. But if all else fails I will send you my address. I never even see an almond tree. We were talking about that a few days back. The online nursery says they will grow in my zone but I have never known of one. We have Pecans. I never knew that the almond was a pit of a fruit. Who eats the fruit?

I tried to make my own amaretti and I dont think I ground my almonds small enough. I will try your recipe.

I agree with freezing them. I have done this when friends have given us walnuts, or we have purchased a bulk amount of pecans. Almond Butter would be fun to make :)


Here is the recipe for Amaretti. Like I mentioned in the above post I have not tried it yet, but plan on it soon! Let me know if you make it.

Easy Amaretti

4 cups almonds, finely chopped
3 eggs
2 cups sugar
1 Tbsp. lemon zest
1 Tbsp. Almond extract
2 cups powdered Sugar
36 whole almonds

Blend together chopped almonds, eggs, sugar, lemon zest and almond extract. Roll teaspoonfuls of dough into walnut size balls, then roll on powdered sugar. Place each ball on a baking sheet lined with aluminum foil. place an almond in the center of each ball; pressing down slightly. Bake at 350 degrees for 15 minutes. makes about 3 dozen. Serve with a cup of steamy espresso :)

and they store well if still in the shell. Just put them in a cool place and you'll have them all winter. That would be awesome.

Wow ladies thanks so much for all the ideas, almonds will be flying around here Tuesday. Now they say 50 mile per hour winds with the rain, we may be doing some of this on the camp stove if the power goes out. I'm so excited! I'll let you know how it all turns out.

If you have something to grind them into a flour (I actually think a food processor would work for this) Almond flour is really good. You can use it in many cake and cookie recipes, one of our favorite cookies around here are Almond butter cookies.

Okay, here is my recipe. Its super easy. Easier than the first one I posted seems. I make this every holiday season and its one of the most requested things I make for gifts. Any nut you like would probably work and almonds are very good!

Spicy Nuts
2 1/2 C Nuts, Almonds, Walnuts, Pecans are all good.
1 C. sugar
1/2 C. water
1 tsp. cinnamon. I use a little more.
1/2 tsp. salt
1 1/2 tsp vanilla.

Heat nuts at 375 degrees in the oven for 5 minutes, stirring once. Warm nuts makes the coating go over better. Cool nuts means the coating cools too quickly. Butter sides of a heavy 2 qt saucepan. In it, combine sugar, water, cinnamon and salt. Cook and stir till the sugar dissolves and mixture boils. Cook without stirring to softball stage (236). Remove from heat.
Beat by hand 1 minute or till mixture just begings to get creamy. Add vanilla and warm nuts: stir gently till nuts are well coated and mixture is creamy. Turn out onto a buttered platter or cookie sheet. Separate at once using 2 forks. Makes about a pound. Recipe doubles well.

Glazed Almonds

Combine 1 cup whole almonds, 1/2 C. sugar and 2 TBSP butter in a heavy skillet. Cook over medium heat, stirring constantly till sugar is golden brown, about 15 minutes. Stir in 1/2 tsp vanilla. Spread nuts on a sheet of aluminum foil. Sprinkle lightly with salt. Cool and then break into 2/3 nuts clusters.

I would also suggest making almond coconut brittle.

Do you eat fish? If so, almonds are great with trout, sole and scallops. I also put them, ( slivered) in salads. A great snack is peanutbutter with slivered almonds on toast or celrey, and of course they keep forever in the freezer.

I will look for my cinnamon almond recipe. You cook it on the stove with sugar, cinnamon, vanilla, water and sugar. Its super easy and is a really popular Christmas gift for my family.
