Today I planned on making applesauce and apple jelly with the peels and cores but accidentally made wonderful hard candy. The applesauce came out perfect and when I was making the jelly it never seemed to reach the jelly stage. I stirred forever and just when I thought it was reaching the jelly stage the phone rang and the temp shot up straight to hard crack candy stage. I couldn't bare to waste the "jelly" so I grabbed a small bottle of cherry candy flavoring (leftover from something else) and tossed it in and poured the stuff out on wax paper. My family loves it! I am not sure if I can repeat it or not but here is the recipe

Apple Core Hard Candy

4 cups apple juice (made from apple peels and cores boiled with water)
3 cups sugar
1 dram candy flavoring

Stir the apple juice and sugar continously until it reaches the hard crack candy stage on a candy thermometer. Add flavoring and pour onto wax paper. let cool and break into pieces. If the candy is sticky dust lightly with powdered sugar.
