Posted - Oct 05 2009 : 08:21:15 AM Well, I tried to do a search here to see if there were any posts already for ideas with green onions but not much luck. Anyone have any ideas what I can do with these green onions I have?
This might sound silly but leeks and green onions are different, aren't they?
Hope someone has some good easy ideas! Maybe some sort of onion soup recipe??

Posted - Oct 09 2009 : 07:26:25 AM i loooove fresh green onions in salads. just eat a little lunch salad for like a week and a handful of them will be gone! we also use them in quiche, which we make a lot around here. which, by the way, you should only need like four eggs for. some recipes call for like 8 eggs!? no one needs that much cholestoral. aaanndd... I just take the fresh ones and dip them in salad dressing and eat em. i love green onions.
here's a really fun home made dressing, but I'm remembering it's a little acidic to go with the green onions, although I love the dressing so much I just eat em together anyways!
1 part olive oil 1 part balsalmic vinegar 1 part dijon mustard (it's gotta be dijon though)
my friends showed me this and when she comes over we try to refrain from scraping the dressing bowl with our fingers, we love it that much :)

Posted - Oct 09 2009 : 06:21:45 AM Dehydrate them. If you do not have a dehydrator, use the pilot or very very low setting in your oven. They are wonderful to add to eggs, potatoes, cassaroles, etc. and so easy to store in your quart mason jars. I have a real problem growing them and wish I had enough to wonder what to do with them. |

Posted - Oct 06 2009 : 10:32:09 AM I freeze alot of them...just sliced up..handy all year. They dry really well too, but I find I like the frozen better.

Posted - Oct 05 2009 : 3:12:26 PM Well, I have to admit...I ended up making my own Onion soup with Chicken and other herbs and it was SOOO GOOD! I put a little cheese on top and it ended up almost being a little French Onion-like. I just put it all together myself. I'm kind of proud of myself. lol.

Posted - Oct 05 2009 : 12:27:56 PM I dehydrate a lot of my extra greenonions. Slice and dry them then when I want to use them I run them through the blender. I use them in scrambled eggs, my cream soup mix, salad dressings, Tex/Mex everything. Lots of things.

Posted - Oct 05 2009 : 08:47:03 AM Yep, that cheeseball is such a great Friday night thing, or weekend snack. 8 oz cream cheese, finely chopped green onions, rinsed, dried and chopped dried beef (like Armor), pepper, tobasco, Worcestshire, garlic powder, mix and shape in ball. My husband loves chopped nuts on the outside. Serve with triscuits or your fave.

Several things. I always use green onions in a cheeseball. Cream cheese, dried beef, green onions, a little garlic and voila! Instant fun and snackitude.
You can also chop them and freeze them in baggies to toss in soups and enchiladas.
