I would like to make some homemade yogurt, but only a small amount. I'm the only one who eats it, my husband dislikes yogurt. Every recipe I find makes a large amount. Any ideas? I don't want to make 8 cups and it all goes bad or doesn't work.

Oh, I thought maybe it was because it affected the good bacteria or something? Well, maybe I will go ahead and do it!! Because I hate having to buy more. :-/

I have used ultra pasteurized a lot. I cant use it with junket... for pudding and making cheese. And I think it isn't health... or something.

Just had to tell ya'll, I'm pleased as punch!! I bought a Donvier yogurt maker at an auction for $2.oo!! I almost didn't bid because I have always just made my yogurt in the warming oven of a wood stove or in the oven of my gas stove and it works just fine. But I figured for that price I'd better give it a try. It works great! The only down side I would see is that you can't make very much per batch. TWO DOLLARS!! Yippee!!

So I just got a good deal on organic milk and was going to make yoghurt but I found out you CANNOT use ultrapasteurized? I am upset now! Why can't I use ultrapasteurized?

Hey Kathryn,
I was wondering how your goat yogurt came out.
There are times when I make goat yogurt that it turns out glue like and only my husband will eat that one.
But the lady I got the goat milk from told me to put plain jello in the milk when I put the starter yogurt in and that has worked, but it isn't good if you want to make the cheese with yogurt. I put the yogurt in the cheese cloth in the colander and a pan under it and add salt and it is great. So if it is gluey you can do that.

Thank you FaithMarie, I have been looking for an easy yogurt recipe. I eat it myself, and have been feeding it to our new puppy (LeaLou, adopted from SPCA in June). She has the most beautiful shiny coat and so much energy.

I am milking 2 Nigerian goat does and have plenty of milk.

Guess what I will be doing first thing in the morning

I would put about 1 large table spoon per 1/2 gallon of milk.

I make yogurt every week ... about two gallons. You can make any amount you want. You just heat the milk to where it has bubbles on top.... kind of slow , you don't want it to burn. then let it cool till you can put your finger in it and hold it in there for the count of ten and it still be hot. 110 degrees. Then take a spoon of already made yogurt... dannon... something that has live cultures. Stur it in gently ... oh I use glass jars now but I used to use tupper ware. Then place in a place where it is not a lot of traffic or where it won't be disturbed... and wrap it in blankets. I make a lot so I use two old blankets ....put them on my dining room table and then place the yogurt on the blankets and wrap them around the jars. and leave over night. And uncover in the morning it should be set. You can put in fridge.... my family loves it tangy... sour so I leave it out another day.
I have made yogurt for 35 years now.. my husband taught me.... it keeps for a few weeks if it lasts that long.
We put it on rice pilof ... put frozen fruit and sweetener and blender its like ice cream. I make a salad dressing everyone loves... yogurt and a little mayo, fetta cheese and black pepper and if they want a little crushed garlic in it. I use it as a dip for breaded chicken breast strips.
I use whole milk... that works best and when my daughter is pregnant I make it with a pint of half and half in with the gallon of milk also for the children. I never use low fat milk... my familys favorite is goat milk yougurt... not the kids they dont like the goat milk. haha

Try this thread for some ideas. I posted a recipe there that works well for us. It makes just one quart and could be easily halved.

I would try cutting the recipe in 1/4s.
