I got the varitety that is long. I have never seen it before, but someone said it is very tender. Never cooked it before. Any recipes? or how do you fix it. Thank you so much

The long eggplants...are you talking about Japanese eggplant? Try stirfrying them.

I like to make eggplant "fries". Slice it long, dip in a little egg and breadcrumbs and pan fry in a little EVOO. Sprinkle with salt and enjoy.

Also LOVE eggplant parmesean. I make mine in a casserole similar to the lasagne. Fry slices of eggplant and layer with sauce and cheese. It freezes BEAUTIFULLY!

Babaganoosh (Sp?) is really good too.

Drat!! I was going to recommed EggPlant Parmesan too!! I know there are other things you can do with it, but nothing is coming to mind. I'll check my recipe books tonight.

Eggplant parmesan is one of our favorites. Every recipe I come across is basically the same but I tend use a recipe from "Silver Palate Cookbook" more than any other.
