Posted - Sep 30 2009 : 08:23:35 AM I like to make eggplant "fries". Slice it long, dip in a little egg and breadcrumbs and pan fry in a little EVOO. Sprinkle with salt and enjoy.
Also LOVE eggplant parmesean. I make mine in a casserole similar to the lasagne. Fry slices of eggplant and layer with sauce and cheese. It freezes BEAUTIFULLY!
Babaganoosh (Sp?) is really good too.
