Posted - Sep 28 2009 : 7:54:13 PM I crack eggs into a bowl and beat completely but do not incorperate air. 3 tbsps equal 1 egg. I freeze them in ice trays and then transfer to a freezer bag. My ice trays only hold 2 tbsps in each hole so for me 3 cubes equal 2 eggs.
When I need to seperate the yolk from the whites and stir, the yolks tend to jel so you need to add 1/8 tsp of salt for every four yolks. 1 tbsps of yolk equals 1 egg. Freeze like above.
To freeze the whites just seperate and freeze as above. 2 tbsps equal one egg.
I make oven bake omeletes so for that I beat a dozen eggs together and freeze in a freezer container and mark as such so I don't have to count out the singles. I thaw them out over night in the frig.

Posted - Sep 27 2009 : 4:06:03 PM I use an Ice Cube Tray and then transfer them to a freezer bag. I just use them in baking and such. I have never tried them fried or scrambled or anything.

Posted - Sep 27 2009 : 3:55:52 PM break each one into a ice cube tray, 1 in each cubes spot, freeze and pop out into what ever freezer container you prefer.

Posted - Sep 27 2009 : 10:59:03 AM I've read that you crack open the dozen eggs and then re-pour them into the individual cups in the cardboard carton for later use. Don't use sytrofoam. Good luck. |
