Wild rice with mushrooms or garlic mashed potatoes are good with duck, especially if you use a fruity glaze on the meat.

I serve duck about every 3 or 4 years at Christmas. The best thing I have used is a apricot glaze, which you apply the last 30 minutes of cooking to seal in the juices. I serve duck with a nice wild rice stuffing, green beans, mash potatoes and if not mash potatoes, home made scallop potatoes and usually a green salad - like baby spinach with candied walnuts, dried cranberries, feta cheese and a vineagrette dressing.

I had a duck breast special with grilled peach and ricotta cheese risotto...I think that duck is great with something fruity.

First off a moist apple stuffing goes great with duck, and bavarien green beans.
