Posted - Sep 24 2009 : 6:30:37 PM I am making a roast duck on sunday. I have never made duck before. I havnt a clue what to serve with it. Any suggestions?

Posted - Sep 25 2009 : 08:42:34 AM Wild rice with mushrooms or garlic mashed potatoes are good with duck, especially if you use a fruity glaze on the meat.

Posted - Sep 25 2009 : 06:52:46 AM I serve duck about every 3 or 4 years at Christmas. The best thing I have used is a apricot glaze, which you apply the last 30 minutes of cooking to seal in the juices. I serve duck with a nice wild rice stuffing, green beans, mash potatoes and if not mash potatoes, home made scallop potatoes and usually a green salad - like baby spinach with candied walnuts, dried cranberries, feta cheese and a vineagrette dressing.

Posted - Sep 24 2009 : 10:36:09 PM I had a duck breast special with grilled peach and ricotta cheese risotto...I think that duck is great with something fruity.
